Description

This hearty potato soup with smoked bacon is true soul food for cold days! I have been making it since my childhood and it simply warms you from the inside. The combination of potatoes, spicy bacon and fresh soup vegetables is unbeatable. It tastes particularly good when it has been left to stand for a day. Ideal for cooking in advance and freezing, so you always have a delicious meal ready. If you like it vegetarian, you can simply leave out the bacon and use a little more vegetables. An absolute must for all soup lovers!

Ingredients (10 ingredients)

  • 2.5 kg Potatoes, floury
  • 1 tbsp Margarine
  • 250 g Farmhouse ham or lean bacon, diced
  • 3 piece Onion(s)
  • 1 kg Soup vegetables frozen
  • 2 tbsp Vegetable broth powder or clear broth, instant
  • 3 piece Bay leaves
  • 4 piece Allspice berries
  • 1 kg Salt and pepper
  • 1 Paket Parsley frozen

Preparation (6 steps)

Prepare potatoes

Peel the potatoes and cut into small pieces. Cover with water in a separate pot, add salt and bring to a boil. Do NOT perform this step in the Thermomix.

Prepare bacon and onions

Cut the bacon into cubes. Peel and quarter the onions. Do NOT perform this step in the Thermomix.

Fry bacon

Melt the margarine in a large pan and sear the diced bacon in it. Add the onions and sauté until translucent. Do NOT perform this step in the Thermomix.

Add vegetables and simmer

Add the frozen soup vegetables to the pan, deglaze with approx. 0.5 liters of water and bring to a boil. Add vegetable broth powder, bay leaves, allspice and pepper, stir well and simmer over low heat until the potatoes in the other pot are cooked. Do NOT perform this step in the Thermomix.

Combine potatoes and vegetables

Pour the potato water (do not discard!) into the vegetables in the pan. Mash the potatoes and add the mashed potatoes to the vegetables as well. If necessary, add more water until the desired consistency is reached. Do NOT perform this step in the Thermomix.

Finish soup

Bring the soup to a boil and simmer for a few more minutes over low heat. In the meantime, cut the sausages into approx. 1 cm thick slices and add them to the soup. Finally, stir in the frozen parsley and season with salt and pepper. Do NOT perform this step in the Thermomix.
