Description

This hearty beef bean stew from the Thermomix® warms you up on cold days. The main ingredients are lean beef, green string beans, potatoes and bacon. Preparation in the Thermomix® takes about 90 minutes and yields 6 servings. Ideal as a hearty family meal or for anyone who loves hearty home cooking.

Ingredients (18 ingredients)

  • 1000 g green string beans
  • 600 g lean beef
  • 500 g potatoes, waxy
  • 150 g streaky bacon
  • 70 g Onion
  • 200 g Leek
  • 225 g Carrots
  • 160 g Celery
  • 10 g Parsley
  • 1 l Beef stock
  • 5 Stück Peppercorns
  • 5 Stück Allspice berries
  • 1 Blatt Bay leaf
  • 1 EL Savory, ground
  • 1 TL Salt
  • 1 TL Baking soda
  • 2 EL neutral vegetable oil
  • White wine vinegar

Preparation (11 steps)

Prepare meat and bacon

Cut the 600 g lean beef into bite-sized cubes of approx. 2 x 2 cm. Cut the 150 g streaky bacon into approx. 1 x 1 cm cubes. Peel and roughly dice the 70 g onion.

Prepare vegetables

Clean the 200 g leek and cut into ½ cm thick slices. Remove the peel from the 160 g celery and dice into approx. ½ cm thick pieces. Peel the 225 g carrots and dice into approx. 1 cm thick pieces. Wash, dry and roughly chop the 10 g parsley.

Prepare beans

Wash the 1 kg green string beans and remove the ends, pulling off any strings. Cut the beans into approx. 4 cm long pieces.

Prepare potatoes

Wash, peel and dice the 500 g waxy potatoes into 1 cm thick cubes.

Sauté onions and bacon

Thermomix® Setting
4 min/248°F/Speed 1 120

Put 2 tbsp neutral vegetable oil into the mixing bowl and heat for 3 min./120°C/speed 1. Add onion and bacon cubes and sauté for 4 min./120°C/speed 1.

Add meat and stock

Add the diced meat to the mixing bowl and deglaze with 1 liter beef stock.

Add vegetables and spices

45 min/212°F/Speed 1 100

Add leek slices, parsley, celery and carrot pieces to the mixing bowl. Season with 1 tsp salt, 5 peppercorns, 5 allspice berries and 1 bay leaf. Close the lid and simmer for 45 min./100°C/speed 1.

Skim

From time to time, use a spoon to skim off the protein that settles on the surface of the water when cooking meat.

Cook beans

In a separate saucepan, bring water to a boil, add 1 pinch of salt, 1 tbsp savory, 1 tsp baking soda and the green beans. Cook the beans for at least 10 minutes. Then pour into a sieve without rinsing them.

Add potatoes

After the 45-minute cooking time, add the potato cubes to the mixing bowl and simmer for another 15 min./100°C/speed 1 with the lid on.

Add beans and season

Thermomix® Setting
5 min/212°F/Linkslauf Speed 1 100 Reverse

After a total of 60 minutes of cooking time, add the cooked beans to the mixing bowl and season with a little salt and white wine vinegar to taste. Heat everything for 5 min./100°C/reverse speed 1.
