Description

These sweet vanilla cinnamon roasted seeds are a delightful snack, perfect for autumn evenings or holiday gatherings. I've been making these for years, and they always disappear quickly! The combination of vanilla and cinnamon with the nutty pumpkin seeds is simply irresistible. They're easy to prepare and make a wonderful homemade gift. Feel free to use other types of seeds, like sunflower seeds, for a different twist. These are also great sprinkled over salads or yogurt for added crunch and flavor. Enjoy!

Ingredients (6 ingredients)

  • 3 cups pumpkin seeds, rinsed and dried
  • 3 tbsp butter, melted
  • 3.5 tsp vanilla sugar, divided
  • 1 tbsp ground cinnamon, divided
  • 0.5 tsp white sugar
  • 0.5 tsp vanilla extract

Preparation (11 steps)

Preheat oven

Preheat oven to 275 degrees F (135 degrees C). This step is done outside of the Thermomix.

Melt butter

Thermomix® Setting

Place 3 tablespoons of butter into the mixing bowl and melt for 2 Min./50°C/Stufe 2.

Combine seeds and butter

Pour the melted butter over 3 cups of rinsed and dried pumpkin seeds in a mixing bowl; stir to coat. This step is done outside of the Thermomix.

Prepare sugar mixture

Combine 1 teaspoon of vanilla sugar, 1 teaspoon of ground cinnamon, and 1/2 teaspoon of white sugar in a small bowl; mix well. Stir in 1/2 teaspoon of vanilla extract. This step is done outside of the Thermomix.

Coat seeds with sugar mixture

Spread the sugar mixture over the seeds, stirring to coat evenly. This step is done outside of the Thermomix.

Prepare cinnamon sugar topping

Combine 1 teaspoon of vanilla sugar and 1 teaspoon of ground cinnamon in a small bowl; mix well. This step is done outside of the Thermomix.

Bake seeds (first round)

Spread seeds over a baking sheet in a single layer. Sprinkle the cinnamon sugar topping over seeds. Bake seeds in the preheated oven for 30 minutes. This step is done outside of the Thermomix.

Prepare cinnamon sugar topping (second round)

Remove baking sheet from oven, stir seeds, and spread evenly on baking sheet again. Combine 1 teaspoon of vanilla sugar and 1 teaspoon of ground cinnamon in small bowl and sprinkle over seeds. This step is done outside of the Thermomix.

Bake seeds (second round)

Return seeds to oven for 30 more minutes. This step is done outside of the Thermomix.

Final vanilla sugar sprinkle

Remove seeds from oven. Sprinkle remaining 1/2 teaspoon of vanilla sugar over seeds. This step is done outside of the Thermomix.

Bake seeds (final round)

Return to oven for 5 minutes. Remove from oven, pour into a serving bowl, and serve warm. This step is done outside of the Thermomix.
