Description

Aromatic shallot butter with red wine and fresh chervil.

Ingredients (7 ingredients)

  • 250 g Butter
  • 6 Stück Shallots
  • 1 TL Honey
  • 150 ml Red wine
  • 35 g Chervil
  • nach Geschmack Salt
  • nach Geschmack Pepper

Prepare shallots

Peel 6 shallots and place in the mixing bowl. Chop for 3 sec./speed 5. If necessary, use the spatula to push down from the edge.

Sauté shallots

Add 20 g butter to the shallots in the mixing bowl and sauté for 3 min./120°C/speed 1.

Caramelize shallots

Add 1 tsp honey to the shallots in the mixing bowl and caramelize for 2 min./120°C/speed 1.

Deglaze and reduce red wine

Thermomix® Setting
5 min/212°F/Speed 1 100

Add 150 ml red wine to the shallots in the mixing bowl and bring to a boil for 5 min./100°C/speed 1 without the measuring cup. Then reduce for another 5 min./Varoma/speed 1 without the measuring cup until almost no liquid remains.

Add chervil and mix

20 sec/Speed 3 Linkslauf Reverse

Wash 35 g chervil, shake dry, chop coarsely and add to the mixing bowl together with the remaining 230 g room temperature butter, salt and pepper. Stir for 20 sec./speed 3 reverse.

Season and serve

Season the red wine butter with salt and pepper and serve as desired. The butter can be stored in the refrigerator.
