Diese Black Bean Tacos sind ein absolutes Highlight für alle, die es gerne würzig mögen! Die Kombination aus cremiger Avocado, feuriger Chili und aromatischen schwarzen Bohnen ist einfach unschlagbar. Ich mache sie besonders gerne, wenn es schnell gehen muss, denn die Zubereitung ist wirklich kinderleicht. Die Guacamole bekommt durch die Chili eine angenehme Schärfe, die perfekt mit der Süße des Honigs in den Bohnen harmoniert. Ideal für einen entspannten Abend mit Freunden oder als schnelles Mittagessen. Wer es noch etwas schärfer mag, kann zusätzlich Chipotle hinzufügen. Ein tolles vegetarisches Gericht, das garantiert jedem schmeckt!

Ingredients (20 ingredients)

  • 1 tbsp vegetable oil
  • 3 clove garlic cloves
  • 3 can black beans
  • 400 g black beans
  • 3 tbsp cider vinegar
  • 1.5 tbsp honey
  • 1.5 tbsp smoked paprika
  • 1.5 tbsp ground cumin
  • 1 clove garlic clove
  • 2 tbsp roughly chopped coriander
  • 1 piece green chilli
  • 2 piece avocados
  • 1 piece lime
  • 110 g pomegranate seeds
  • 1 piece green chilli
  • 1 piece white onion
  • 1 handful fresh coriander
  • 8 piece corn or flour tortillas
  • 1 piece chipotle
  • 1 piece soured cream

Garlic and Beans Preparation

3 min/248°F/Speed 1 120

Add 1 tbsp vegetable oil and 3 garlic cloves to the mixing bowl and cook for 3 Min./120°C/Stufe 1.

Cooking the Black Beans

Thermomix® Setting
5 min/212°F/Speed 1 100 Reverse

Add 3 x 400g cans of black beans (drained), 3 tbsp cider vinegar, 1 ½ tbsp honey, 1 ½ tbsp smoked paprika, 1 ½ tbsp ground cumin, and salt to taste to the mixing bowl. Cook for 5 Min./100°C/Stufe 1/Linkslauf. Use the spatula to gently crush the beans while cooking.

Preparing the Guacamole

Thermomix® Setting
3 sec/Speed 5

Add 1 small garlic clove, 2 tbsp roughly chopped coriander, and 1 green chilli to the mixing bowl. Chop for 3 Sek./Stufe 5.

Mixing the Guacamole

Thermomix® Setting
5 sec/Speed 4 Reverse

Add 2 avocados (pitted and roughly chopped), juice of 1 lime, and salt to the mixing bowl. Mix for 5 Sek./Stufe 4/Linkslauf. The guacamole should be chunky.

Preparing the Salsa

Add 110g pomegranate seeds, 1 green chilli (finely chopped), 1 small white onion (finely chopped), and a small handful of fresh coriander (roughly chopped) to a bowl and mix well. Set aside.

Warming the Tortillas

Heat 8-12 corn or flour tortillas in a griddle pan or steamer until warm. This step does not require the Thermomix.

Reheating the Beans

2 min/212°F/Speed 1 100 Reverse

Reheat the black bean mixture in the mixing bowl for 2 Min./100°C/Stufe 1/Linkslauf.

Serving the Tacos

To serve, put 1-2 heaped tbsp of beans on a tortilla. Top with a big spoonful of guacamole and some salsa, hot sauce and a dollop of soured cream or yogurt. This step does not require the Thermomix.
