Description

Ribbon noodles with creamy eggs from the Thermomix® are a quick and inexpensive main course of Italian cuisine. This simple pasta recipe with noodles, eggs and cream is prepared in just 30 minutes and yields 4 servings. Ideal for student cuisine or as a hearty, vegetarian family meal. Refined with butter, chives, salt and pepper, it is an uncomplicated meal for every day.

Ingredients (7 ingredients)

  • 400 g Noodles
  • 6 Eggs
  • 100 ml Cream for cooking
  • 3 EL Butter
  • Salt
  • Pepper
  • Chopped chives

Preparation (5 steps)

Cook noodles

Cook 400 g of noodles according to package instructions in a separate pot until al dente. Then drain and set aside.

Prepare eggs

Whisk 6 eggs, 100 ml cream for cooking, salt and pepper in a bowl and set aside.

Fry noodles

Melt 3 tablespoons of butter in a pan over medium heat. Add the cooked noodles and fry for about 10 minutes, turning occasionally, until lightly browned.

Let the egg mixture set

Pour the whisked egg mixture over the noodles in the pan. Let it set over low heat, stirring constantly, until the eggs are creamy but no longer liquid.

Serve

Arrange the noodles with egg on plates and garnish with chopped chives. Serve immediately.
