Description

This dish is a wonderful combination of fruity sweetness and savory spice. The orange-tomato sauce gives the tagliatelle a special touch, while the ginger meatballs provide a pleasant kick of spice.   • 1 piece Onion
  • 3 tbsp Oil
  • 2 tbsp Tomato paste
  • 850 ml Tomatoes, canned
  • 400 g Tagliatelle noodles
  • Salt
  • 1 piece untreated Orange
  • Pepper
  • 1 piece Ginger
  • 6 Stiele Parsley
  • 1 tbsp Breadcrumbs
  • 200 g mixed minced meat

Chop onion

Peel and quarter the onion and place in the mixing bowl. Chop for 3 sec./speed 5.

Add 3 tbsp oil and the chopped onion to the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare tomato sauce

Add 2 tbsp tomato paste and the canned tomatoes (850 ml) and simmer for 10 min./100°C/speed 1. Use a spatula to break up the tomatoes a little.

Add orange flavor

Rinse the orange under hot water and rub dry. Remove the zest and squeeze half an orange. Add orange juice and zest to the sauce in the mixing bowl and stir in for 2 min./100°C/speed 1.

Season the sauce with salt and pepper and stir in for 1 min./100°C/speed 1.

Chop ginger

Form approx. 16 small balls from the minced meat.

Fry meatballs

Heat 2 tbsp oil in a pan. Fry the meatballs in it, turning occasionally, for approx. 5 minutes until golden brown.

Add meatballs to sauce

Add the fried meatballs to the sauce in the mixing bowl and heat for 2 min./100°C/Reverse rotation speed 1.

Cook tagliatelle

In the meantime, prepare the tagliatelle in boiling salted water according to the package instructions.

Drain the noodles, mix with the sauce, arrange and garnish with parsley and orange zest.
