Description

This recipe for tagliatelle with hare ragout in orange-cream sauce is a real festive dish! I especially like to make it in the autumn when the oranges are nice and juicy. The tender hare meat, combined with the fruity sauce, is simply delicious. The preparation is a bit more complex, but it's worth it! If you can't get hare meat, you can also use rabbit. A dash of white wine and fresh thyme round off the dish perfectly. Served with freshly grated Parmesan – a poem!

  • 1 Packung Tagiatelle
  • 1 x Organic orange
  • 1 x Onion
  • 1 Zehe Garlic
  • 2 Zweig Thyme
  • 1 Schuss White wine
  • 1 Becher Cream
  • 1 x Salt
  • 1 x Pepper
  • 1 x Sugar
  • 1 Stück Parmesan cheese

Preparation (10 steps)

Prepare onion and garlic

Peel and quarter the onion and place in the mixing bowl. Peel the garlic and add to the mixing bowl as well.

Chop onion and garlic

Chop the onion and garlic for 3 sec./speed 5. Use the spatula to push everything down from the edge.

Sauté sauce base

Sauté the chopped onion and garlic for 3 min./120°C/speed 1 without adding any fat.

Add the bones and scraps from the hare to the mixing bowl and roast for 5 min./120°C/speed 2. Make sure nothing burns.

Deglaze with white wine

Add a dash of white wine and the juice of the two oranges to the mixing bowl and simmer for 5 min./100°C/speed 1.

Add cream and reduce

Add the cream to the mixing bowl and let it reduce for 10 min./90°C/speed 2 until the desired consistency is reached. Use the spatula to prevent burning.

Season the sauce with salt, pepper and sugar and stir for 1 min./90°C/speed 1.

Prepare hare dumplings

Mince the game through the 3mm disc of the meat grinder. Crush and finely chop the clove of garlic. Mix the zest of half an orange, thyme leaves, salt and pepper and the garlic into the mince. Form tennis ball-sized dumplings with wet hands. Fry all around in clarified butter.

Finish sauce

Add the fried hare dumplings to the sauce and heat for 5 min./90°C/reverse speed speed 1.

Cook the tagliatelle in salted water according to the package instructions.
