Description

The knitting needle cake is a moist cake with coffee and egg liqueur notes. The cake is soaked with a coffee-rum mixture and covered with an egg liqueur cream. Finally, it is decorated with cocoa powder and grated chocolate. The preparation time is about 100 minutes. Ideal for afternoon coffee.

Ingredients (17 ingredients)

  • 250 g Butter or margarine
  • 250 g Sugar
  • 1 Pck. Vanilla sugar
  • 0.5 Fläschchen Butter-vanilla flavor
  • 6 Stück Eggs
  • 250 g Wheat flour
  • 2.5 TL Baking powder
  • 0.25 l cold coffee
  • 3 EL Sugar
  • 2 EL Cocoa powder
  • 1 EL Rum
  • 400 ml Whipping cream
  • 2 Pck. Cream stiffener
  • 2 TL Sugar
  • 5 EL Egg liqueur
  • 1 EL Cocoa powder
  • 1 Päckchen Grated chocolate

Preparation (8 steps)

Stir butter and sugar

Put 250 g of butter or margarine into the mixing bowl and stir for 2 min./speed 4. Add 250 g of sugar and 1 packet of vanilla sugar and stir for another 2 min./speed 4. Add 1/2 bottle of butter-vanilla flavor and stir for 1 min./speed 4.

Stir in eggs

Add 6 eggs individually one after the other and stir in for 30 seconds/speed 4 each time.

Mix flour and baking powder and stir in

Thermomix® Setting

Mix 250 g wheat flour and 2 1/2 level tsp baking powder. Add the flour mixture and stir in for 1 min./speed 3.

Pour batter into springform pan and bake

Pour the batter into a springform pan. Bake in a non-preheated convection oven at 160 degrees for 40-45 minutes.

Prick and soak cake

Immediately after baking, prick the cake several times with a thick knitting needle. Let cool. Put 1/4 l cold coffee, 3 tbsp sugar, 2 tbsp cocoa powder and 1 tbsp rum into the mixing bowl and stir for 5 seconds/speed 3. Pour the coffee mixture over the holes in the cake. Let the cake soak overnight.

Whip cream

Put 400 ml whipping cream and 2 packets of cream stiffener into the mixing bowl and whip until stiff with the butterfly for 2 min./speed 3.5.

Prepare egg liqueur cream

Thermomix® Setting

Add 2 tsp sugar and 5 tbsp egg liqueur to the remaining cream and stir for 30 seconds/speed 3.

Decorate cake

Spread the egg liqueur cream on the cake. Sprinkle with cocoa powder and decorate with grated chocolate.
