Description

This chocolate curd cake with orange jelly is a refreshing and festive cake. The chocolate dough is filled with a curd cream and covered with an orange jelly. The cake is ideal for birthdays or Christmas and is suitable for coffee parties or as a dessert.

Ingredients (22 ingredients)

  • 4 Stk Eggs
  • 120 g Sugar
  • 100 g Flour
  • 20 g Cocoa
  • 55 g Neutral oil
  • 1 Pkg Vanilla sugar
  • 1 pinch Salt
  • 1 tsp Baking powder
  • 250 g Curd
  • 80 g Icing sugar
  • 1 Pk. Vanilla sugar
  • 0.5 Stk Organic lemon, zest and juice
  • 1 pinch Salt
  • 250 ml Whipped cream
  • 2 Spritzer Rum aroma
  • 5 Blatt Gelatin (corresponds to 8.3g powder)
  • 125 ml Mautner Markhof Morgenzauber Orange Syrup
  • 125 ml Water
  • 4 Blatt Gelatin (corresponds to 6.6g powder)
  • 125 ml Whipped cream
  • 0.5 Stk Orange slice
  • Mint leaves

Preparation (14 steps)

Preheat oven and prepare tin

Preheat the oven to 180°C top and bottom heat. Grease a cake tin (26cm) and dust with flour.

Beat eggs, sugar, salt and vanilla sugar

Put the eggs, sugar, salt and vanilla sugar in the mixing bowl and whisk for 4 min./speed 4 until foamy.

Stir in vegetable oil

Slowly add 55g vegetable oil to the mixing bowl and stir in for 1 min./speed 2.

Mix flour, baking powder and cocoa and stir in

Mix 100g flour, 1 tsp baking powder and 20g cocoa in a separate bowl. Add the flour mixture to the mixing bowl and stir in for 30 sec./speed 3.

Bake dough

Pour the dough into the prepared cake tin and bake on the second to last shelf for approx. 25 minutes. Then remove the cake from the oven and let it cool completely.

Whip whipped cream until stiff

Put 250ml whipped cream in the mixing bowl and whip with the butterfly for 2-3 min./speed 3.5 until stiff. Observe the time so that the cream does not turn into butter.

Prepare curd cream

Put 250g curd, 80g icing sugar, 1 pack of vanilla sugar, 1 pinch of salt, 1/2 organic lemon (zest and juice) and 2 splashes of rum aroma in the mixing bowl and stir for 30 sec./speed 3.

Prepare gelatin

Thermomix® Setting
1 min/122°F/Speed 2 122°F

Stir 5 sheets of gelatin with 5 tablespoons of cold water, let swell for 5 minutes. Then add the gelatin to the mixing bowl and heat for 1 min./50°C/speed 2 while stirring until it is completely dissolved.

Fold gelatin and whipped cream into the curd cream

Stir 1 tablespoon of the curd cream into the gelatin. Fold the whipped cream into the curd cream and then add the remaining gelatin mixture and stir well.

Fill and cool the cake

Spread the cream evenly on the chocolate cake base and refrigerate for at least two hours.

Prepare orange jelly

1 min/122°F/Speed 2 122°F

Soak 4 sheets of gelatin in 4 tablespoons of cold water for five minutes, then add to the mixing bowl and heat for 1 min./50°C/speed 2 while stirring.

Mix orange jelly

Thermomix® Setting
2 min/140°F/Speed 1 140°F

Put 125ml orange syrup and 125ml water in the mixing bowl and heat for 2 min./60°C/speed 1. Dissolve the gelatin in the orange syrup while stirring.

Cover and cool the cake with orange jelly

Then pour and spread the orange layer on the curd cream. Then refrigerate the cake for at least three more hours.

Decorate the cake

Decorate the cake with 125ml whipped cream, orange slices and mint leaves.
