Description

This chicken and fresh herbs pie is a comforting dish, perfect for autumn evenings or festive meals. The pastry, lightly spiced with mustard and cayenne pepper, contrasts wonderfully with the creamy chicken filling, flavored with parsley, rosemary and fresh thyme. I often prepare it for Sunday brunch, and it always makes a splash. The preparation takes a little time, but the result is really worth it. Feel free to use different herbs according to your tastes! A real delight to share with family or friends.

Ingredients (19 ingredients)

  • 250 ml Flour
  • 5 ml Dry mustard
  • 2 ml Cayenne pepper
  • 1 piece Egg yolk(s)
  • 30 ml Cold water
  • 750 cube Chicken breast
  • 1 clove Crushed garlic
  • 1 piece Chopped onion(s)
  • 1 branche Celery stalk(s)
  • 284 ml Chicken broth
  • 250 ml Milk
  • 60 ml Chopped parsley
  • 15 ml Rosemary
  • 15 ml Fresh thyme
  • 75 ml Cold butter
  • 45 ml Butter
  • 30 ml Olive oil
  • 2 ml Salt
  • Salt pepper

Preparation (8 steps)

Preheat the oven

Preheat the oven to 200°C (th. 6/7).

Preparation of the dough

Thermomix® Setting
10 sec/Speed 4

Put the flour, salt, dry mustard and cayenne pepper in the Thermomix bowl. Mix 10 Sek./Stufe 4. Add the cold butter cut into pieces and mix in pulses 5 Sek./Stufe 4. Add the egg yolk mixed with cold water and mix 20 Sek./Stufe 4. If necessary, add cold water, one tablespoon at a time, until the dough forms a ball.

Set aside the dough

Wrap the dough in cling film and set aside in the refrigerator for at least 30 minutes.

Preparation of the filling

Thermomix® Setting
3 min/248°F/Speed 1 120

Heat the olive oil in a frying pan over high heat. Flour the chicken cubes and brown them on all sides. Remove the chicken from the pan and set aside. In the Thermomix bowl, put the garlic and chopped onion and mix 3 Sek./Stufe 7. Add the butter and chopped celery and cook 3 Min./120°C/Stufe 1.

Cooking the filling

Thermomix® Setting
3 min/194°F/Speed 2 90

Add the flour to the Thermomix bowl and cook 2 Min./100°C/Stufe 2. Stir in the chicken broth and milk. Bring to a boil, mixing 5 Min./100°C/Stufe 3. Simmer 3 Min./90°C/Stufe 2.

Assembly of the pie

Thermomix® Setting
20 sec/Linkslauf/Speed 1 Reverse

Add the reserved chicken, chopped parsley, rosemary and fresh thyme to the Thermomix bowl. Salt, pepper and mix gently 20 Sek./Linkslauf/Stufe 1. Pour the filling into a 20 cm pie dish and let cool.

Covering the pie

Roll out the dough on a floured surface. Cut out a disc slightly larger than the pie dish. Cover the preparation with the dough and fix it to the edges of the dish. Cut out decorations from the dough scraps if desired. Brush the dough with milk.

Baking the pie

Bake in the preheated oven for 25 to 30 minutes, or until the dough is golden brown.
