Description

This curd cherry cake is an absolute classic and tastes simply wonderful! I especially like to make it in the summer when the cherries come fresh from the market. The combination of the fluffy dough, the creamy curd filling and the juicy cherries is simply unbeatable. A shot of almond liqueur rounds the whole thing off perfectly. The cake can be prepared well and is ideal for birthdays or other festive occasions. It is always well received by me and is eaten up in no time! A real eye-catcher on every coffee table.

Ingredients (17 ingredients)

  • 2 Stück Eggs (size M)
  • 190 g Sugar
  • 1 EL Sugar
  • nach Geschmack Salt
  • 35 g Flour
  • 35 g Cornstarch
  • 0.5 TL Baking powder
  • 30 g Ground almonds without skin
  • 6 Blatt Gelatin
  • 750 g Low-fat curd
  • 1 Pck. Vanilla sugar
  • 0.5 Stück Lemon (juice of)
  • 250 g Whipped cream
  • 500 g Cherries
  • 250 ml Cherry nectar
  • 2 EL Almond liqueur
  • Roasted almond slivers for sprinkling

Preparation (14 steps)

Mix eggs and sugar

Put 2 eggs, 190 g sugar and 1 tbsp sugar into the mixing bowl and mix for 3 min/speed 4.

Add flour mixture

20 sec/keine/Speed 3

Add 35 g flour, 35 g cornstarch, ½ tsp baking powder and a pinch of salt and stir in for 20 seconds/speed 3.

Mix in almonds

Add 30 g ground almonds without skin and stir in for 10 seconds/speed 2.

Bake the dough

Pour the dough into a springform pan (26 cm diameter) and bake in a preheated oven at 175°C top/bottom heat for approx. 15-20 minutes. Then let it cool down.

Prepare gelatin

Soak 6 sheets of gelatin in cold water according to the package instructions.

Prepare curd mixture

Put 750 g low-fat curd, 1 pack. vanilla sugar and juice of ½ lemon in the mixing bowl and mix for 20 seconds/speed 3.

Whip cream

2 min/keine/Speed 3.5

Put 250 g whipped cream into the mixing bowl, insert the butterfly and whip until stiff for 2 min/speed 3.5. Watch the cream so that it doesn't turn into butter.

Dissolve gelatin

Thermomix® Setting
2 min/122°F/Speed 2 50

Squeeze out the soaked gelatin and dissolve in a small saucepan over low heat. Alternatively, the gelatin can also be dissolved in the Thermomix: add the gelatin to the mixing bowl and melt for 2 min./50°C/speed 2.

Stir in gelatin

Stir the dissolved gelatin into the curd mixture. First add a small part of the curd mixture to the gelatin, then add the gelatin to the remaining curd mixture and stir for 10 seconds/speed 3.

Fold in cream

Carefully fold the whipped cream into the curd mixture.

Prepare cherries

Wash, stem and pit about 500 g of cherries. Set aside some of the cherries for decoration.

Fill cake

Drizzle the cooled cake base with approx. 250 ml cherry nectar and 2 tbsp almond liqueur. Spread the curd-cream mixture on the cake base and spread the cherries on top.

Cool cake

Put the cake in the refrigerator for at least 4 hours, preferably overnight.

Decorate cake

Before serving, sprinkle the cake with the remaining cherries and roasted almond slivers.
