Ingredients (12 ingredients)

  • 2 piece sweet potatoes, peeled and cut into chunks
  • 1 piece refrigerated pie crust (9 inch)
  • 1 cup white sugar
  • 2 piece eggs, beaten
  • 2 tbsp butter
  • 1 tsp vanilla extract
  • 1 tbsp all-purpose flour
  • 1 tsp pumpkin pie spice
  • 0.5 tsp salt
  • 0.5 cup buttermilk
  • 0.25 tsp baking soda
  • 700 ml water

Cook Sweet Potatoes

Peel and cut 2 sweet potatoes into chunks. Place the sweet potatoes into the mixing bowl and add 700 ml water. Cook for 15 Min./100°C/Stufe 1.

Drain and Cool Sweet Potatoes

Drain the cooked sweet potatoes well and let them cool completely. This step is important to prevent a soggy pie crust.

Preheat Oven and Prepare Pie Crust

Preheat oven to 175°C. Line the bottom of a 9-inch pie plate with 1 refrigerated pie crust.

Mash Sweet Potatoes

Mash the cooled sweet potatoes with a potato masher or fork. Measure 2 cups of the mash.

Combine Sweet Potato Mixture

Add 2 cups mashed sweet potatoes, 1 cup white sugar, 2 beaten eggs, 2 tbsp butter, and 1 tsp vanilla extract to the mixing bowl. Mix for 20 Sek./Stufe 3.

Combine Dry Ingredients

In a separate bowl, mix together 1 tbsp all-purpose flour, 1 tsp pumpkin pie spice, and ½ tsp salt.

Add Dry Ingredients to Sweet Potato Mixture

Add the dry ingredients to the sweet potato mixture in the mixing bowl. Mix for 10 Sek./Stufe 3.

Combine Buttermilk and Baking Soda

In a small bowl, combine ½ cup buttermilk and ¼ tsp baking soda.

Add Buttermilk Mixture to Sweet Potato Mixture

Add the buttermilk mixture to the sweet potato-flour mixture in the mixing bowl. Mix for 10 Sek./Stufe 3.

Pour into Crust and Bake

Pour the batter into the prepared pie crust. Bake in the preheated oven for 1 hour 10 minutes.

Cool and Serve

Let cool on a rack until firm, at least 20 minutes before serving.
