Description

This aubergine and tomato tart is a delicious vegetarian recipe that is easy to prepare with the Thermomix®. The combination of roasted aubergine, fresh tomato and cream make this tart a perfect dish for a light lunch or informal dinner. Dijon mustard gives it a special touch and the grated cheese gratin makes it irresistible. I often prepare it in the summer when the tomatoes are at their best. It is a guaranteed success! It is also an excellent way to incorporate vegetables into the diet in a tasty and attractive way. It can be served hot or cold, according to taste.

Ingredients (9 ingredients)

  • 250 g Puff pastry
  • 1 piece Aubergine
  • 1 piece Onion
  • 2 piece Tomato
  • 250 ml Liquid cream for cooking
  • 100 g Grated cheese
  • 20 g Dijon mustard
  • 1 pinch Salt
  • 1 pinch Ground black pepper

Preparation (6 steps)

Roll out the dough and prepare the mold

Roll out the puff pastry on a lightly floured surface and shape it to fit the mold. Line the mold with baking paper and place the dough inside. Spread the base of the dough with 20 g of Dijon mustard.

Cut and place the tomatoes

Cut the 2 tomatoes into thin slices and place them on the dough spread with mustard.

Prepare the aubergine and onion

Peel the aubergine and cut it into cubes. Peel the onion and cut it into strips. Place the aubergine and onion in a bowl.

Mix the aubergine, onion and cream

Thermomix® Setting

Add 250 ml of liquid cream, salt and ground black pepper to taste to the bowl with the aubergine and onion. Mix all the ingredients well.

Pour the preparation over the tart

Pour the aubergine, onion and cream mixture over the tart, covering the tomato slices. Spread 100 g of grated cheese on top.

Bake the tart

Bake the tart in the preheated oven at 180ºC for 40 minutes, or until the dough is golden and the cheese is melted and au gratin.
