Description

This Argentinian sweet potato tart, also known as pasta frola, is a classic that evokes childhood memories. The shortcrust pastry, soft and slightly sweet, contrasts perfectly with the creamy sweet potato filling. Lemon zest and vanilla essence give it an irresistible aromatic touch. It is ideal to enjoy on an autumn afternoon with a cup of coffee or as a dessert at a special celebration. Preparing it with the Thermomix® makes the process much easier, and the result is simply delicious! The tart can be prepared in advance and stored in the refrigerator.

Ingredients (8 ingredients)

  • 200 gramos flour
  • 1 piece egg
  • 80 gramos margarine
  • 50 gramos sugar
  • 0.5 cucharada postre baking powder
  • 1 cucharada postre lemon zest
  • 1 cucharada postre vanilla essence
  • 700 gramos sweet potato jam

Preparation (9 steps)

Cream the margarine with the sugar

Thermomix® Setting
20 sec/keine/Speed 4

Place 80 grams of margarine and 50 grams of sugar in the Thermomix bowl. Add 1 dessert spoon of lemon zest and 1 dessert spoon of vanilla essence. Mix for 20 seconds/Stufe 4.

Mix the flour with the baking powder

In a separate bowl, mix 200 grams of flour with ½ dessert spoon of baking powder. Set aside.

Integrate the ingredients

Add the flour and baking powder mixture to the Thermomix bowl, along with 1 egg. Mix for 20 seconds/Stufe 5. Do not overmix.

Divide and roll out the dough

Divide the dough into two equal parts. Roll out one part between two sheets of cling film until approximately 0.5 cm thick. Set aside in the refrigerator.

Place the dough in the mould

Grease a 16 cm diameter mould. Place the other half of the rolled dough in the mould, covering the bottom and edges. Set aside in the refrigerator while preheating the oven to 180°C.

Prepare the sweet potato jam

Cut 700 grams of sweet potato jam into cubes. Place the cubes in the Thermomix bowl and crush for 10 seconds/Stufe 6. If necessary, lower the remains from the walls of the bowl with the spatula and crush a few more seconds until you obtain a smooth consistency.

Fill the tart

Pour the crushed sweet potato jam over the dough in the mould, spreading it evenly.

Form the lattice

Remove the rolled dough from the refrigerator and cut strips of approximately 1 cm wide. Place the strips on the sweet potato jam filling, forming a classic lattice.

Bake the tart

Bake the tart in the preheated oven at 180°C for 20 minutes, or until the edges are golden brown.
