Description

These pumpkin and smoked duck breast tartlets are a small delicacy perfect for autumn or the holiday season. I love the sweetness of pumpkin which goes perfectly with the smoked taste of duck breast. This is a recipe that I often make for brunch or a cocktail party. The preparation is quite simple, especially with the Thermomix®, and the result is always stunning. You can also vary the pleasures by adding a pinch of nutmeg or a little fresh goat cheese. A real delight to share!

Ingredients (7 ingredients)

  • 250 g Pumpkin
  • 5 cl Milk
  • 15 cl Liquid cream
  • 150 slice Smoked duck breast
  • 1 piece Egg yolk
  • to taste Salt
  • to taste Pepper

Preparation (10 steps)

Pumpkin preparation

Cut 250 g of pumpkin into cubes of 1 to 1.5 cm on a side. Place the cubes in the Varoma.

Steam cooking

Thermomix® Setting
15 min/Varoma/Speed 1 Varoma

Pour 500 ml of water into the Thermomix bowl. Place the Varoma on the bowl and cook 15 Min./Varoma/Stufe 1.

Reduction of cream and milk

Remove the cooked pumpkin from the Varoma and pour it into the Thermomix bowl. Add 5 cl of milk and 15 cl of liquid cream. Salt and pepper.

Cooking and reduction

10 min/194°F/Speed 2 90

Cook 10 Min./90°C/Stufe 2, stirring gently with the spatula so as not to crush the pumpkin. The liquid should reduce slightly.

Assembling the tartlets

Divide the pumpkin preparation into individual cups.

Adding the smoked duck breast

Cover each cup with 150 g of smoked duck breast slices.

Preparation of the puff pastry

Cut out circles of puff pastry with a cookie cutter with a diameter 1.5 to 2 cm larger than the diameter of the cups.

Application of the dough

Place the puff pastry circles on the cups and press on the edges to stick them.

Gilding

Gently brush the dough with 1 egg yolk.

Oven cooking

Bake for 10 to 15 minutes at 180°C. The dough should rise and take on a beautiful golden color.
