Description

These caramelized vine tomatoes are a delightful side dish or appetizer, bursting with sweet and savory flavors. I've been making this recipe for years, and it's always a hit! The tomatoes are slowly roasted to bring out their natural sweetness, enhanced by garlic and a touch of balsamic vinegar. The result is a sticky, deeply flavored tomato that's perfect served warm or at room temperature. It's especially delicious during the summer months when tomatoes are at their peak. This vegetarian dish is easy to prepare and adds a touch of elegance to any meal.

Ingredients (3 ingredients)

  • 6 piece very large vine tomatoes
  • 3 tbsp olive oil
  • 2 clove garlic cloves

Prepare the tomatoes

Preheat the oven to 160°C. Cut the 6 very large vine tomatoes in half around the equator. This step does not require the Thermomix.

Infuse oil with garlic

Add 2 garlic cloves and 3 tbsp olive oil to the mixing bowl. Chop the garlic for 3 seconds on speed 7. Then, cook for 3 minutes at 120°C on speed 1.

Brush tomatoes with garlic oil

Brush the cut surfaces of the tomatoes with 1 tbsp of the garlic-infused oil. This step does not require the Thermomix.

Sear the tomatoes

Place a griddle pan or heavy cast iron frying pan (not non-stick) over a high flame and leave it to heat. Place the tomatoes cut side-down on the hot griddle. Cook undisturbed for 1 minute, then take the pan off the heat. This step does not require the Thermomix.

Prepare for baking

Transfer the tomatoes, cut side-up, to a shallow baking dish. Brush cut surfaces with the vinegar, then with about 2 tbsp of the remaining garlic-infused oil. Place a sliver or two of garlic on each tomato, and sprinkle with the sugar. This step does not require the Thermomix.

Bake the tomatoes

Bake for about 1 hour until the tomatoes are deep brown and sticky-looking. This step does not require the Thermomix.

Final touches

Cool a little, then finish with a sprinkling of balsamic vinegar, extra oil and a scattering of basil. Serve warm or at room temperature. This step does not require the Thermomix.
