Description

A hearty dish with tender pork fillet wrapped in bacon, served with a creamy mushroom cream sauce and spätzle. This recipe for the Thermomix® is ideal for a festive dinner or a hearty lunch.   • 650 g Pork fillet
  • 150 g Bacon
  • 3 EL Oil
  • 750 g Mushrooms
  • 50 g Butter
  • 100 g Diced smoked bacon
  • 2 m.-große Onion(s)
  • 2 Zehe/n Garlic
  • 1 EL Tomato paste
  • 200 ml Cream
  • 100 ml Crème fraîche
  • 100 ml Broth
  • 100 ml White wine
  • Worcestershire sauce
  • Salt and pepper
  • Flour
  • Herbs
  • 400 g Spätzle
  • 1 TL, gehäuft Salt
  • 2 EL Oil
  • Butter

Preparation (10 steps)

Chop onions and garlic

Add 2 large onions to the mixing bowl and chop for 3 seconds/speed 5. Add 2 cloves of garlic and chop for 3 seconds/speed 7. Use the spatula to push everything down from the edge.

Sauté onions and garlic

Add 2 tablespoons of oil and 100 g of diced smoked bacon to the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare mushrooms

Clean and quarter 750 g of brown mushrooms. Set aside.

Sauté mushrooms

Add 50 g of butter and the prepared mushrooms to the mixing bowl and sauté for 5 min./120°C/reverse rotation speed 1.

Prepare sauce

Add 1 tablespoon of tomato paste, 200 ml of cream, 100 ml of crème fraîche, 100 ml of broth and 100 ml of white wine to the mixing bowl. Season with some Worcestershire sauce, salt and pepper. Cook for 10 min./100°C/speed 2.

Thicken sauce

If the sauce is too thin, mix some flour or cornstarch with cold water and add to the mixing bowl. Cook for 2 min./100°C/speed 2.

Refine sauce

Add fresh herbs (parsley, chives, etc.) as desired and stir in for 5 seconds/speed 4. Season with salt and pepper.

Prepare spätzle

Add 400 g of spätzle, 1 heaping teaspoon of salt and 2 tablespoons of oil to a pot of boiling water and prepare according to the package instructions. Then drain and refine with some butter.

Prepare pork fillet

Cut 650 g of pork fillet into medallions and wrap with 150 g of bacon. Sear on all sides in a pan with the remaining oil (1 tbsp).

Arrange

Serve pork fillet medallions with the mushroom cream sauce and spätzle.
