Description

These lasagna towers are a great alternative to classic lasagna! I especially like to make them in the summer because they are quick to prepare and you can also enjoy them cold. The combination of turkey breast, fresh tomatoes, zucchini and rocket is simply unbeatable. The crème fraîche makes the towers nice and juicy. If you like, you can sprinkle some grated cheese on top. An ideal dish for a quick lunch or a light dinner!

Ingredients (10 ingredients)

  • 6 piece Lasagna sheets bought or homemade
  • 3 piece small Tomatoes
  • 200 g Zucchini
  • 25 g Rocket
  • 250 g Turkey breast smoked in slices
  • 150 g Crème fraîche
  • 1 tbsp Basil chopped (fresh)
  • 100 g Cheese grated Gouda (optional)
  • to taste Salt
  • to taste Pepper

Preparation (6 steps)

Prepare noodles

Thermomix® Setting
10 min/212°F/Speed 1 100

Add 500 ml water and 1 teaspoon salt to the mixing bowl and bring to the boil for 10 min./100°C/speed 1. Add the lasagna sheets one after the other through the lid opening and cook for 10 min./100°C/speed 1. Then pour the pasta into a sieve and rinse with cold water.

Prepare vegetables

Wash and drain tomatoes and zucchini. Cut off the ends of the zucchini and cut the vegetables into approx. 1/2 cm thick slices. Sort, wash and drain the rocket well.

Prepare crème fraîche

Thermomix® Setting

Put 150 g crème fraîche, 1 tablespoon chopped basil, salt and pepper to taste in the mixing bowl and stir for 10 sec./speed 3.

Layer lasagna towers

Halve the lasagna noodles crosswise. Place four noodle squares on a baking tray lined with baking paper and cover with half of the turkey breast slices. Distribute zucchini and tomato slices on top, add a little salt, cover with one noodle plate each and spread half of the crème fraîche on top. Successively add the remaining turkey breast, some rocket and the remaining lasagna noodles. Finally, spread the remaining crème fraîche on top, sprinkle with cheese if you like.

Bake lasagna towers

Bake the lasagna towers in a preheated oven at 200°C top/bottom heat (180°C fan oven, gas mark 4) for approx. 25 minutes.

Arrange

Arrange the lasagna towers hot on plates and sprinkle with remaining rocket and crushed pink berries.
