  • 50 g Bittersweet chocolate couverture
  • 100 g Butter
  • 100 g Spice speculoos
  • 110 g Wheat flour Type 405
  • 2 TL Baking powder
  • 40 g Raw cane sugar
  • 1 Prise(n) Salt
  • 1 EL Baking cocoa
  • 3 Stück Eggs
  • Fat for the springform pan
  • 150 g Cream cheese
  • 1 Stück Organic orange
  • 2 Pck. Bourbon vanilla sugar
  • 150 g Cream
  • 30 g Baileys

Preparation (10 steps)

Preheat oven

Preheat the oven to 180°C circulating air. Grease a springform pan (20 cm diameter) and set aside.

Melt couverture and butter

3 min/122°F/Speed 2 50

Place 50 g of bittersweet chocolate couverture in pieces and 100 g of butter in the mixing bowl and melt for 3 min./50°C/speed 2. Then transfer and let cool.

Chop speculoos

Thermomix® Setting
10 sec/Speed 8

Put 70 g of spice speculoos in the mixing bowl and chop for 10 sec./speed 8. Transfer and set aside.

Prepare dough

Thermomix® Setting
20 sec/Speed 4

Add 110 g wheat flour Type 405, 2 tsp baking powder, 40 g raw cane sugar, 1 pinch of salt, 1 tbsp baking cocoa, 3 eggs and the chopped speculoos to the mixing bowl and mix for 20 sec./speed 4.

Fold in chocolate butter

10 sec/Speed 3

Add the cooled chocolate butter to the dough in the mixing bowl and stir in for 10 sec./speed 3.

Bake dough

Pour the dough into the prepared springform pan and bake in the preheated oven for about 20 minutes. Then let cool.

Prepare cream cheese frosting

Put 150 g cream cheese, zest of an organic orange and 2 packets of bourbon vanilla sugar in the mixing bowl and stir for 20 sec./speed 3.

Whip cream

Thermomix® Setting
2 min/Speed 3.5

Put 150 g cream in the mixing bowl, insert butterfly whisk and whip until stiff for 2 min./speed 3.5.

Fold in cream and Baileys

Thermomix® Setting
10 sec/Linkslauf/Speed 2 Reverse

Add the whipped cream and 30 g Baileys to the cream cheese in the mixing bowl and fold in for 10 sec./Reverse/speed 2.

Finish cake

Spread the cream cheese frosting on the cooled chocolate cake. Roughly crumble 30 g of spice speculoos and decorate the cake with it.
