Description

This coconut buttermilk cake is an absolute classic that I have baked many times. It is super juicy and the shredded coconut gives it a great texture and a slightly exotic taste. The preparation is very simple and it's even faster with the Thermomix®! Perfect for Sunday coffee or as a gift for brunch. The cake keeps well for a few days if stored properly. A really uncomplicated and delicious recipe!

Ingredients (9 ingredients)

  • 150 g Sugar
  • 3 piece Eggs
  • 300 ml Buttermilk
  • 400 g Flour
  • 1 Pck. Baking powder
  • 1 pinch Salt
  • 200 g Shredded coconut
  • 200 g Whipped cream
  • 200 g Sugar

Preparation (8 steps)

Preheat oven and prepare pan

Preheat the oven to 180°C top/bottom heat. Line a rectangular springform pan with baking paper.

Mix sugar, eggs and buttermilk

Add 150g sugar, 3 eggs and 300ml buttermilk to the mixing bowl and mix for 20 sec/speed 4.

Mix in dry ingredients

Add 400g flour, 1 packet baking powder and 1 pinch of salt to the mixing bowl and mix for 20 sec/speed 3. Use the spatula to scrape down from the edge and mix for another 10 sec/speed 3.

Pour batter into pan

Pour the dough into the prepared springform pan and smooth it out.

Prepare and spread coconut-sugar mixture

Mix 200g shredded coconut and 200g sugar in a separate bowl and spread evenly over the dough.

Bake cake

Bake the cake in the preheated oven for 20-25 minutes. The coconut topping should not get too brown.

Add cream to warm cake

Pour 200g whipped cream over the warm cake immediately after baking.

Let cool and serve

Let the cake cool, cut into pieces and serve.
