Description

This delicious Shortcrust Pastry Tart with Frangipane and Jam is an absolute delight! I particularly like to bake it in autumn, when the days get shorter and you crave something sweet. The combination of crispy shortcrust pastry, creamy frangipane filling and fruity jam is simply irresistible. The almonds on the surface give the cake an extra crunch. The preparation takes a little time, but it's definitely worth it! Perfect for a cozy afternoon with friends or family. A piece of Italy for your home!

Ingredients (13 ingredients)

  • 150 g peeled almonds
  • 150 g softened butter
  • 150 g sugar
  • 3 piece eggs
  • 1 fialetta almond flavoring
  • 50 g 00 flour
  • 2 piece eggs
  • 100 g sugar
  • 80 g sunflower seed oil
  • 8 g baking powder for cakes
  • 320 g 00 flour
  • 250 g cherry jam
  • flaked almonds

Preparation (8 steps)

Grind almonds

Thermomix® Setting
10 sec/Speed 10

Place 150 g almonds in the mixing bowl and grind for 10 sec/speed 10. Transfer and set aside.

Prepare frangipane cream

Thermomix® Setting
20 sec/Speed 4

Place 150 g soft butter, 150 g sugar, 3 eggs and 1 vial of almond flavoring in the mixing bowl and mix for 20 sec/speed 4. Add the ground almond flour and 50 g flour and mix for another 10 sec/speed 4. Transfer and set aside.

Prepare shortcrust pastry

Thermomix® Setting
2 min/Kneading speed

Place 2 eggs, 100 g sugar, 80 g sunflower oil, 8 g baking powder and 320 g flour in the mixing bowl and process into a dough for 2 min/kneading stage. Wrap the dough in cling film and refrigerate for 30 minutes.

Preheat oven and prepare tin

Preheat the oven to 180°C (top/bottom heat). Grease a round baking tin (28 cm diameter) and dust with flour.

Roll out dough and place in the tin

Roll out 3/4 of the dough on a floured work surface and place in the prepared tin. Press the dough down at the edge and cut off any overhanging edges.

Spread jam and frangipane cream

Spread 250 g cherry jam (or other jam of your choice) on the dough base. Then pour the frangipane cream over it and smooth it out.

Attach decoration and bake

Form strips from the remaining dough and place them on the tart as a grid or other pattern. Sprinkle with flaked almonds. Bake the tart in the preheated oven for 40-45 minutes until golden brown.

Let cool and serve

Remove the tart from the oven and let it cool completely before removing it from the tin and serving.
