Description

This pear cake with sour cream topping, prepared in the Thermomix®, is a juicy fruit cake with pears, eggs, flour, butter and sour cream. It is ideal for the autumnal coffee table or as a dessert. The preparation takes about 80 minutes, of which 30 minutes are active working time. The recipe yields 12 servings and is a delicious cake for the whole family.

Ingredients (11 ingredients)

  • 3 Stück Eggs, size M, at room temperature
  • 800 g Pears
  • 275 g Wheat flour, type 405
  • 175 g soft Butter
  • 175 g Sugar
  • 150 g Sour cream
  • 1 Pck. Bourbon vanilla sugar
  • 8 g Baking powder
  • 1 Prise Salt
  • 2 EL Powdered sugar
  • 2 EL Lemon juice

Preparation (10 steps)

Preheat oven and prepare mold

Preheat the oven in good time to 180 °C top/bottom heat. Grease the springform pan (26 cm diameter) with a little butter and dust with some flour. Perform this step outside of the Thermomix.

Prepare pears

Peel, core and cut the 800 g pears into pieces about 1 to 2 cm in size. Place the pear pieces in a bowl and mix with 1 to 2 tablespoons of lemon juice to prevent them from turning brown. Perform this step outside of the Thermomix.

Mix butter, sugar and vanilla sugar

Put 175 g soft butter, 175 g sugar and 1 packet of bourbon vanilla sugar into the mixing bowl and mix for 3 min/speed 4 until a light and creamy mixture is formed.

Stir in eggs

Add the 3 room-temperature eggs one after the other through the lid opening and stir in for 30 sec/speed 3 each time. After each egg, use the spatula to push the mixture down from the edge.

Add flour mixture and sour cream

Put 275 g flour, 8 g baking powder and 1 pinch of salt into the mixing bowl. Add 150 g sour cream and mix everything for 30 sec/speed 4. Do not stir for longer, so that the dough does not become tough.

Drain and prepare pears

Drain the pear pieces in a sieve and let them drain. Set aside about a third of the pear pieces for decoration. Perform this step outside of the Thermomix.

Fold pears into the dough

Put the larger portion of the drained pear pieces into the mixing bowl and fold into the dough for 10 sec/reverse/speed 2. Use the spatula to help.

Fill the dough into the mold and bake

Pour the dough into the prepared springform pan and smooth with a dough scraper. Distribute the remaining pear pieces on the dough and press in lightly. Bake the cake in the preheated oven on the second rack from the bottom for about 50 minutes. Use the wooden stick test to check whether the cake is baked through. Perform this step outside of the Thermomix.

Let the cake cool down

Remove the cake from the oven and let it steam out in the mold for 30 minutes. Then carefully remove from the mold and let cool completely on a wire rack. Perform this step outside of the Thermomix.

Decorate and serve cake

Dust the cooled cake with powdered sugar as desired and serve. Perform this step outside of the Thermomix.
