Description

This cake with 12 spoons is a simple and delicious dessert, perfect for breakfast or a snack. Its soft texture and lemon scent make it irresistible. I often prepare it when I want a homemade dessert, but I don't want to spend hours in the kitchen. It is prepared in a flash and the result is always a success! Try it, you won't regret it!   • 12 tbsp sugar
  • 12 tbsp water
  • 12 tbsp seed oil
  • 3 piece eggs
  • 16 g baking powder
  • 1 packet vanillin

I don't know exactly where this recipe comes from, but I remember my grandmother often prepared it, especially when unexpected guests arrived. It was her ace in the hole, a simple but always appreciated dessert. Its simplicity is precisely its strength: few ingredients, all easily available, and a procedure accessible to everyone. Each ingredient has a very specific role in the success of this cake. The 00 flour gives the right structure, making it soft and light. The sugar, in addition to sweetening, contributes to browning in the oven. The water and seed oil, in equal quantities, give moisture and softness, preventing the cake from being dry. The eggs are essential to bind the ingredients and give softness. The baking powder, of course, is the leavening agent that allows the cake to rise in the oven. The vanillin and lemon zest add a touch of perfume and freshness, making the flavor more interesting. A pinch of salt enhances the flavors. Preparing this cake with the Thermomix® is child's play. It is important to follow the order of the ingredients indicated in the recipe to obtain a homogeneous mixture. When whipping the eggs with the sugar, it is essential that the mixture becomes frothy and light, in order to incorporate air and make the cake softer. The lemon zest must be grated finely, avoiding the white part (the so-called albedo), which is bitter. When adding the flour and baking powder, it is important not to work the dough too much, otherwise the cake may be gummy.
