Description

This margherita cake filled with cream cheese is a classic Italian dessert revisited in a modern key. The soft and light base goes perfectly with the cream cheese and lemon, creating a balance of flavors that conquers at the first taste. Perfect for a birthday party or a special snack, this cake is easy to prepare and will make young and old happy. I often prepare it for Sunday brunch, and I must say that it always disappears in a flash! For a lactose-free version, I used lactose-free butter and milk. A real success!

  • Potato starch
  • Butter
  • Eggs
  • Sugar
  • Baking powder
  • Milk
  • Butter

Preparation (9 steps)

Whip the egg whites

Thermomix® Setting
3 min/Speed 3.5

Insert the egg whites into the bowl with a pinch of salt and whisk with the butterfly for 3 Min./Stufe 3.5. Transfer the whipped egg whites to a bowl and set aside.

Sift the powders

In a bowl, sift together the flour, potato starch and baking powder. Set aside.

Whip the egg yolks with the sugar

Thermomix® Setting
3 min/Speed 4

Insert the egg yolks and sugar into the bowl and whisk for 3 Min./Stufe 4 until the mixture is frothy and light.

Add butter, powders and milk

Thermomix® Setting
20 sec/Speed 3

Add the butter, sifted powders and milk to the egg yolk and sugar mixture. Mix for 20 Sek./Stufe 3.

Fold in the egg whites

Remove the mixture from the bowl and gently fold in the whipped egg whites with movements from the bottom up.

Transfer to the mold and bake

Pour the mixture into a 24 cm mold lined with baking paper. Bake in a preheated oven at 180°C for 30 minutes or until golden brown.

Cool the cake

Remove the cake from the oven and let it cool completely on a wire rack.

Prepare the filling

20 sec/Speed 3

Insert the cream cheese and sugar into the bowl and mix for 20 Sek./Stufe 3. Add the lemon zest and juice and mix for another 10 Sek./Stufe 3.

Fill the cake

Cut the cake into two layers. Spread the filling on the bottom layer, cover with the second layer and sprinkle with powdered sugar.
