Ingredients (15 ingredients)

  • 6 Stück Eggs
  • 1 Prise Salt
  • 100 g liquid Butter
  • 200 g ground Almonds
  • 175 g Sugar
  • 0.5 TL Speculaas spice
  • 2 TL Baking powder
  • 5 Stück small, tart Apples
  • 1 EL Lemon juice
  • 500 g Apple juice
  • 150 g Sugar
  • 1 TL Cinnamon
  • 2 Päckchen Vanilla pudding powder
  • 600 g Cream
  • 3 Päckchen Cream stiffener

Preparation (12 steps)

Prepare and cook Apples

Wash, quarter and core Apples. Cut into cubes and sprinkle with Lemon juice. Put 450 ml Apple juice and 150 g Sugar in the mixing bowl and bring to the boil for 10 min./100°C/speed 1.

Add Apple pieces and thicken

Add Apple pieces. Stir the Vanilla pudding powder together with the Cinnamon and the remaining Apple juice and add to the mixing bowl. Stir in for 2 min./100°C/speed 2.

Let the Apple mixture cool down

Pour the Apple mixture into a bowl and let cool for about 1 hour.

Preheat oven

Preheat the oven to 180°C top/bottom heat. Line a springform pan (24-26 cm) with baking paper.

Whisk egg whites

Separate the Eggs. Put Egg whites with a pinch of Salt in the mixing bowl and whisk with the butterfly 3 min./speed 3.5 until stiff. Transfer and refrigerate.

Beat egg yolks

Thermomix® Setting

Put Egg yolks and 175 g Sugar in the mixing bowl and beat until frothy for 3 min./speed 4.

Prepare dough

Thermomix® Setting

Add liquid Butter and stir in for 30 sec./speed 3. Mix Almonds, Speculaas spice and Baking powder, add and mix for 20 sec./speed 3.

Fold in egg whites

Add Egg whites and carefully fold in with a spatula.

Bake dough

Pour the dough into the prepared pan and bake in the preheated oven for about 40 minutes (stick test).

Cool and hollow out the cake

Remove the cake from the oven, let it cool briefly, then remove it from the pan and let it cool on a wire rack. Hollow out the base with a spoon, leaving the edge standing. Crumble the scooped out cake into a bowl.

Whip cream until stiff

Put Cream with the Cream stiffener in the mixing bowl and whisk with the butterfly 2 min./speed 3 until stiff.

Complete the cake

Place the cake base on a plate. Cover with the Apple mixture. Spread Cream dome-shaped on top and sprinkle with cake crumbs, refrigerate for at least 2 hours. Sprinkle with powdered sugar before serving.
