Description

This Spanish omelette with caramelized onion is a dish that I often prepare at home. The sweetness of the caramelized onion contrasts wonderfully with the mild flavor of the potatoes and egg, creating a delicious combination. It is perfect for a weekend brunch, as an appetizer to share or even as a main course accompanied by a fresh salad. The recipe is simple, although it requires a bit of patience to caramelize the onion to perfection. Go ahead and try it, you will love it! Also, it is a very tasty and nutritious vegetarian option.

Ingredients (6 ingredients)

  • 6 piece Egg
  • 750 g Potato
  • 2 piece Onion
  • 1 pinch Salt
  • 1 container Water
  • 1 piece Extra virgin olive oil

Caramelize the onion

Thermomix® Setting

Cut the onions into julienne strips. Place the onions in the Thermomix bowl with 2 tbsp of olive oil. Program 25 Min./Varoma/Reverse spin/Spoon speed. Halfway through cooking, add half a glass of water.

Prepare the potatoes

Peel the potatoes and cut them into thin slices. In a frying pan with plenty of olive oil, fry the potatoes over low heat for about 20 minutes, turning them from time to time. Drain the fried potatoes well.

Beat the eggs

In a large bowl, beat the eggs with salt to taste.

Mix the ingredients

Add the fried potatoes and caramelized onion to the bowl with the beaten eggs. Stir well so that the potatoes are impregnated with the egg. Let the mixture rest for 5 minutes.

Set the omelette

In a frying pan with a tablespoon of olive oil, set the omelette over medium heat for 4 minutes on each side, approximately. Turn it carefully and cook the other side.
