Description

These apple yogurt pancakes are a delicious and easy breakfast or dessert. They are quick to prepare with the Thermomix®. The combination of apple and yogurt makes them particularly juicy and light. Ideal for brunch or as a sweet meal in between.

Ingredients (9 ingredients)

  • Butter or oil
  • 100 g Apple (roughly grated)
  • 2 Stück Eggs
  • 20 g Rice syrup or maple syrup
  • 120 ml Sparkling water
  • 150 g Greek yogurt
  • 40 g Oats
  • 130 g Flour
  • 1 TL Baking powder

Preparation (6 steps)

Prepare the apple

Peel the apple. Place the WunderSlicer V2 on the mixing bowl lid and select the coarse disc. Roughly grate the apple and set the grated apple aside.

Whisk egg whites

3 min/Speed 3.5

Separate 2 eggs. Put the egg whites into the mixing bowl and whisk with the butterfly for 3 min./speed 3.5 until stiff. Transfer the egg whites to a bowl and set aside.

Mix egg yolks

Thermomix® Setting
20 sec/Speed 3

Put the egg yolks, 20g rice syrup or maple syrup, 120ml sparkling water and 150g Greek yogurt into the mixing bowl and mix for 20 sec./speed 3.

Mix dry ingredients

15 sec/Speed 4

Put 130g flour, 30-40g oats and 1 tsp baking powder into the mixing bowl and stir in for 15 sec./speed 4.

Finalize dough

10 sec/Linkslauf/Speed 2 Reverse

Insert the Patix dough knife. Put 100g grated apple and the egg whites into the mixing bowl and fold in for 10 sec./reverse/speed 2.

Bake pancakes

Heat some butter or oil in a pan. Add the dough spoonful by spoonful and bake the pancakes.
