  • 3 cups mashed potatoes
  • 0.25 cups shortening
  • 3 tbsp half-and-half
  • 0.75 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp white sugar

Prepare Potato Mixture

Place 3 cups of mashed potatoes, ¼ cup of shortening, and 3 tablespoons of half-and-half into a bowl. Cover the bowl with plastic wrap and let it stand for 8 hours or overnight in the refrigerator.

Add ¾ cup of all-purpose flour, 1 teaspoon of salt, and 1 teaspoon of white sugar to the potato mixture in the mixing bowl. Mix until a uniform dough forms.

Divide the dough into 12 equal portions and form each portion into a small ball. Place the dough balls in the refrigerator to keep them cool.

Remove one dough ball from the refrigerator at a time. On a floured surface, use a floured rolling pin to roll the dough out into a very thin circle, slightly smaller than the diameter of your skillet. Use more flour as needed to prevent sticking.

Heat a lefsa pan or skillet over medium-high heat on the stovetop. Cook the dough circle until bubbles form, about 1 minute; flip and cook until done, about 30 seconds.

Repeat the rolling and cooking steps with the remaining dough balls. Serve warm.
