Description

These cheesecake slices with a crunchy biscuit base are a real eye-catcher on any cake buffet! I love making them because they are so quick and easy to prepare. The cream cheese provides a creamy consistency that is perfectly complemented by the biscuit base. Refined with a touch of vanilla, they simply taste delicious. Ideal for birthdays, brunch or just with coffee. If you like, you can add fresh fruit - raspberries go particularly well!

Ingredients (6 ingredients)

  • 250 g Whole wheat biscuits
  • 125 g Butter
  • 400 g Cream cheese
  • 100 g Sugar
  • 3 Pck. Bourbon vanilla sugar
  • 1 piece Egg (room temperature)

Chop biscuits

10 sec/Speed 8

Put 250 g whole wheat biscuits into the mixing bowl and chop for 10 sec./level 8. If necessary, push down with the spatula and repeat the process.

Melt butter and mix with biscuit crumbs

3 min/122°F/Speed 2 50

Put 125 g butter in the mixing bowl and melt for 3 min./50°C/level 2. Then add the chopped biscuits and mix for 20 sec./level 3.

Shape and pre-bake biscuit base

Pour the biscuit-butter mixture into a baking dish lined with baking paper (approx. 25 x 35 cm) and press firmly. Pre-bake the base in a preheated oven at 160 °C circulating air for about 10 minutes.

Prepare cream cheese cream

Thermomix® Setting
30 sec/Speed 4

Put 400 g cream cheese, 100 g sugar, 3 packs. Bourbon vanilla sugar and 1 egg (room temperature) in the mixing bowl and stir for 30 sec./level 4.

Put cheesecake mixture on the base and bake

Spread the cream cheese cream on the pre-baked biscuit base. Drizzle raspberry sauce on top as desired and marble with a skewer. Bake the cake for another 30 minutes at 160 °C circulating air.

Cool and cut

Let the cake cool completely after baking and then cut into slices.
