Description

These truffle omelette bites are a real eye-catcher on any buffet! The combination of the delicate omelette, the creamy chervil note and the noble truffle aroma is simply irresistible. I particularly like to make these little delicacies when guests come, because they can be prepared well in advance and are ready in no time at all. The brioche provides a slightly sweet note that harmonizes perfectly with the savory aromas. An ideal finger food for special occasions or just to enjoy!

Ingredients (14 ingredients)

  • 8 Stiele Chervil
  • 10 g Chervil
  • 1 tbsp Lime juice
  • 2 tbsp Sunflower oil
  • 150 g Crème fraîche
  • 1 tbsp Truffle butter
  • 8 piece Egg(s), size M
  • 1 Prise(n) Salt
  • 100 ml Whipping cream
  • 12 Scheibe/n Brioche
  • 6 Halm(e) Chives
  • 20 g Truffle black
  • 1 etwas Butter for the mold
  • 1 etwas Salt and pepper

Preparation (9 steps)

Chop chervil

Thermomix® Setting
3 sec/Speed 8

Place 8 sprigs of chervil (leaves plucked) in the mixing bowl and chop for 3 sec./speed 8. Scrape down the sides with the spatula.

Prepare chervil cream

Thermomix® Setting
10 sec/Speed 4

Add 1 tbsp lime juice, 2 tbsp sunflower oil, salt and pepper to the chopped chervil in the mixing bowl and mix for 10 sec./speed 4. Scrape down the sides with the spatula.

Refine chervil cream

Remove the chervil mixture from the mixing bowl and stir in a bowl with 150 g crème fraîche. Season with salt and pepper and chill until serving.

Prepare omelette mixture

Thermomix® Setting
20 sec/Speed 4

Place 1 tbsp truffle butter, 8 eggs (size M), 1 pinch of salt and 100 ml whipping cream in the mixing bowl and mix for 20 sec./speed 4.

Bake omelettes

Grease a 12-muffin tin with some butter. Distribute the egg mixture evenly in the greased muffin tin and place the tin on a baking sheet. Bake in the preheated oven at 140 degrees (fan oven 120 degrees) on the middle rack for approx. 15 minutes.

Prepare brioche

Cut out approx. 5 cm large rounds from 12 slices of brioche (1 cm thick) with a cookie cutter.

Toast brioche

Toast the brioche rounds in a large pan without fat over medium heat for 2 - 3 minutes on each side until golden brown. Remove from the pan and let cool.

Chop chives

Place 6 sprigs of chives in the mixing bowl and chop for 3 sec./speed 7.

Arrange omelette bites

Remove the omelettes from the oven, let them cool slightly and remove them from the molds. Spread the brioche rounds with chervil cream and place 1 omelette on top. Arrange on a plate, grate 20 g truffle over it, sprinkle with the chopped chives and serve. Serve the remaining chervil cream separately.
