Description

This orange and almond cake is a true comfort food, perfect for breakfast or a snack. Its soft texture and intense citrus fragrance make it irresistible. I often prepare it during the winter, when oranges are at their best. The addition of toasted almonds gives a crunchy note that goes perfectly with the softness of the dough. It is a simple cake to make, ideal for those who do not have much experience in the kitchen. It keeps well for several days, keeping its fragrance intact. Ingredients (8 ingredients)

  • 8 piece Eggs
  • 200 g Sugar
  • 250 g 00 Flour
  • 2 piece Oranges
  • 100 g Butter
  • 1 packet Baking powder
  • 50 g Flaked almonds
  • 30 g Powdered sugar

Preparation (8 steps)

Preparation of orange juice and almonds

Squeeze the oranges and filter the juice. Set aside. Toast the flaked almonds in a pan over low heat for a few minutes, until golden and fragrant. Set aside a handful of almonds for the final decoration.

Melt the butter

Cut the butter into pieces and put it in the Mixtopf. Melt for 3 Min./50°C/Stufe 2.

Whip eggs and sugar

Thermomix® Setting

Add the eggs and sugar in the Mixtopf. Whip with the butterfly for 4 Min./Stufe 3.5, until you get a frothy and light mixture.

Addition of orange juice and melted butter

Thermomix® Setting
30 sec/Speed 2

Remove the butterfly. With the Mixtopf running at Stufe 2, slowly pour in the orange juice and the cooled melted butter. Mix for 30 Sek./Stufe 2.

Incorporate flour and baking powder

Thermomix® Setting
20 sec/Speed 3

Add the sifted flour and baking powder in the Mixtopf. Mix for 20 Sek./Stufe 3.

Addition of orange zest and almonds

Add the grated orange zest and the toasted almonds (keeping a handful aside for the surface) in the Mixtopf. Mix gently with the spatula to mix everything together.

Transfer to the mold and baking

Grease and flour a 20-22 cm mold. Pour the dough into the mold and sprinkle the surface with the remaining almonds. Bake in a preheated static oven at 170°C for 45 minutes.

Cooling and decoration

Remove the cake from the oven and let it cool slightly. Gently remove the cake from the mold and transfer it to a serving dish. Sprinkle with powdered sugar before serving.
