Description

This chicken dish with peppers and potatoes is a truly comforting delight, perfect for autumn or winter evenings. I love preparing this recipe because it is simple, tasty and full of colours. The peppers bring a touch of sweetness, while the smoked paprika adds an irresistible depth of flavour. The melting potatoes complement everything perfectly. It's a complete dish, ideal for a meal with family or friends. Feel free to add a pinch of Espelette pepper to enhance the taste and warm hearts. A real treat!

Ingredients (17 ingredients)

  • 800 g chicken breasts
  • 1 piece red pepper
  • 1 piece green pepper
  • 1 piece yellow pepper
  • 1 piece sweet pepper
  • 4 piece potatoes
  • 3 piece tomatoes
  • 1 piece onion
  • 4 clove garlic
  • 1 feuille bay leaf
  • 1 branche thyme
  • 2 c. à c. paprika
  • 2 c. à s. olive oil
  • 1 pinch coarse salt
  • 100 g green olives
  • 1 cube broth
  • 2 c. à s. tomato paste

Preparation of the vegetables

Wash the peppers, cut them into strips and remove the seeds from the sweet pepper. Cut the pepper into strips. Peel the tomatoes after immersing them for a few seconds in boiling water, then in cold water. Cut the tomatoes into cubes and set aside. Peel the potatoes and cut them into large cubes. Mince the onion and crush the garlic cloves.

Preparation of the broth

Prepare the broth with 50 cl of hot water and a broth cube. Mix until completely dissolved.

Cooking the chicken

In a pan, brown the whole chicken breasts in hot olive oil. Brown on both sides, then remove from the pan and set aside. Cut the chicken into large cubes.

Cooking the vegetables

Put the minced onion in the Thermomix bowl and chop 3 Sek./Stufe 5. Add the olive oil and cook 3 Min./120°C/Stufe 1.

Adding the peppers and garlic

Add the crushed tomatoes, tomato paste and 35 cl of broth to the Thermomix bowl. Cook 5 Min./100°C/Stufe 1.

Add the chicken cubes, bay leaf, thyme sprig, coarse salt and paprika to the Thermomix bowl. Mix gently with the spatula. Cook 10 Min./100°C/Linkslauf Stufe 1.

Adding the potatoes

Add the potatoes cut into cubes to the Thermomix bowl. Add broth if necessary to cover the potatoes. Cook 25 Min./100°C/Linkslauf Stufe 1.
