Description

This hearty main course is Wareniki, dumplings with potato filling, prepared in the Thermomix®. The main ingredients are potatoes, flour, egg, onions and milk. The vegetarian dish yields about 40 servings and is ideal as a filling family meal. The preparation time is about 70 minutes.

  • 220 g Milk
  • 450 g Flour
  • 1 TL Salt
  • 30 g Oil
  • 500 g Water
  • 500 g Potatoes (halved)
  • 2 Stück Onions
  • 70 g Butter
  • 0.5 TL Salt

Prepare dough

Thermomix® Setting

Put all ingredients for the dough into the mixing bowl: 1 egg, 220 g milk, 450 g flour, 1 tsp salt, 30 g oil. 3 min./kneading setting.

Let dough rest

Place the finished dough in a lightly floured bowl and let it rest, covered, for about 30 minutes.

Cook potatoes

Add 500 g water to the mixing bowl, insert the steamer basket, weigh in 500 g halved potatoes and 25 min./Varoma/level 1.

Pour off cooking liquid

Keep the potatoes warm and discard the cooking liquid.

Chop onions

Place 2 onions in the mixing bowl and 6 sec./level 6 - scrape everything from the edge of the mixing bowl with the spatula.

Sauté onions

Add 70 g butter and 5 min./Varoma/level 1.

Add potatoes and salt

Thermomix® Setting

Add the cooked potatoes and 0.5 tsp salt to the mixing bowl and 4 sec./level 6 - transfer and let cool.

Roll out dough and cut out circles

Roll out the dough 2 mm thick on a floured work surface, cut out circles with a glass (4 cm diameter).

Add filling

Place a heaped teaspoon of filling on each circle.

Seal dough edges

Press the edge of the dough firmly together to form a crescent.

Process dough scraps

Knead the dough scraps well and roll out again, cut out, fill and press together firmly.

Prepare Wareniki

Place the finished Wareniki on baking paper until ready to cook.

Cook Wareniki

Bring water to a boil and add salt. Cook Wareniki until they float to the surface, let simmer for about 2-3 minutes.

Serve Wareniki

Place the finished Wareniki in a bowl and mix in butter.
