Description

  • 1 l Water
  • 20 g Butter
  • 20 g Flour
  • 100 ml Cream
  • 1 TL Salt
  • 1 Prise Pepper
  • 1 Prise Nutmeg
  • 1 TL Sugar
  • 1 EL Lemon juice
  • 30 g Oil
  • 20 g Vinegar
  • 10 g Mustard
  • 4 Stück Eggs
  • 50 g Mayonnaise
  • 20 g Yogurt
  • 1 Prise Chives

Preparation (8 steps)

Peel and prepare asparagus

Peel 1 kg of white asparagus and cut off the woody ends. Keep the asparagus peels and ends for the asparagus cream soup. Cut the peeled asparagus into pieces or leave it whole, depending on the recipe.

Prepare asparagus cream soup

Put the asparagus peels and ends with 1 liter of water into the mixing bowl and cook for 20 min./100°C/speed 1. Then pass through a sieve, collect the stock and put it back into the mixing bowl.

Refine soup

Put 20 g butter and 20 g flour into the mixing bowl and sauté for 3 min./100°C/speed 2. Add 100 ml cream and the cooked asparagus pieces (approx. 200g) and simmer for 5 min./90°C/speed 1. Season with salt, pepper and nutmeg. Puree if necessary: 20 sec./speed 8.

Prepare asparagus ragout

Put 20 g butter into the mixing bowl and melt for 2 min./120°C/speed 1. Add 20 g flour and sauté for 2 min./100°C/speed 2. Deglaze with 200 ml asparagus water (from the asparagus cooking) and 100 ml cream and simmer for 5 min./90°C/speed 1. Add 200 g of cooked asparagus pieces and season with salt, pepper and lemon juice.

Cook asparagus

Put 500 ml water, 1 tsp salt, 1 tsp sugar and 1 tbsp butter into the mixing bowl and bring to the boil for 5 min./100°C/speed 1. Place the peeled asparagus in the simmering basket and cook for 15-20 min./Varoma/speed 1. Adjust the cooking time depending on the thickness of the asparagus spears.

Cook asparagus in aluminum foil

25-30 min/Varoma/Speed 1 Varoma

Wrap the peeled asparagus with some butter, salt, pepper and lemon juice in aluminum foil. Place the packets in the Varoma. Put 500 ml water into the mixing bowl and steam for 25-30 min./Varoma/speed 1.

Classic asparagus salad

Cut 200 g cooked asparagus into pieces. For the dressing, put 30 g oil, 20 g vinegar, 10 g mustard, salt, pepper and some sugar into the mixing bowl and mix for 10 sec./speed 3. Mix the asparagus with the dressing.

Egg salad with asparagus

Peel 4 boiled eggs and quarter them. Cut 200 g cooked asparagus into pieces. For the dressing, put 50 g mayonnaise, 20 g yogurt, 1 tsp mustard, salt, pepper and some chives into the mixing bowl and mix for 10 sec./speed 3. Mix eggs and asparagus with the dressing.
