Description

These vegan chocolate brownies are a poem! Juicy, chocolatey and with a slight banana note - simply irresistible. Preparation with the Thermomix® is child's play and saves time. The vanilla cream makes the whole thing a festive dessert that will delight not only vegans. I like to bake these brownies for birthdays or just when the chocolate hunger calls. The walnuts provide a nice crunch. If you like, you can also mix other nuts or chocolate chips into the dough. An absolute must for all chocolate lovers!

Ingredients (12 ingredients)

  • 200 g Wheat flour Type 405
  • 60 g Sugar
  • 50 g Cocoa powder
  • 200 g dark Chocolate
  • 1 piece Banana (small)
  • 100 g Applesauce
  • 100 ml Rapeseed oil
  • 200 ml Soy drink
  • 100 g Walnuts
  • 200 g vegetable Whipped cream
  • 1 Schote(n) Vanilla
  • 1 tsp Powdered sugar

Preparation (7 steps)

Mix dry ingredients

10 sec/Speed 4

Add 200 g wheat flour type 405, 50 g sugar and 50 g cocoa powder to the mixing bowl and mix for 10 sec/level 4.

Melt chocolate

Thermomix® Setting
3 min/122°F/Speed 2 50

Put 200 g of dark chocolate in pieces into the mixing bowl and chop for 5 sec/level 7. Then melt for 3 min./50°C/level 2.

Add and mix liquid ingredients

20 sec/Speed 3

Peel 1 small banana, put it in pieces into the mixing bowl and puree for 5 sec/level 5. Add 100 g applesauce, 100 ml rapeseed oil and 200 ml soy drink and stir for 20 sec/level 3.

Mix dry and liquid ingredients

40 sec/Speed 3

Add the flour-cocoa mixture from step 1 to the liquid ingredients in the mixing bowl. Roughly chop 100 g of walnuts, add half of them to the mixing bowl and stir everything for 30 sec/level 3. Use the spatula to push down from the edge and stir for another 10 sec/level 3.

Bake dough

Line a small baking dish with baking paper, pour in the dough and smooth with a spoon. Spread the remaining chopped walnuts on top. Bake in a preheated oven at 175°C top/bottom heat for approx. 20-25 minutes and let cool lukewarm.

Prepare vanilla cream

2 min/Speed 3,5

In the meantime, halve the vanilla pod lengthwise and scrape out the pulp. Clean the mixing bowl. Add 200 g vegetable whipped cream, the vanilla pulp and 1 tsp powdered sugar to the mixing bowl. Beat with the butterfly for 2 min./level 3.5 until stiff. Observe the consistency and adjust the time if necessary.

Serve brownies

Cut the cooled brownies into 9 pieces. Dust with powdered sugar and serve garnished with the vanilla cream.
