Description

This beetroot velvet soup is a real delight for the taste buds! I often prepare it in the autumn, when the beetroots are at their peak. The sweetness of the raw beetroot combines perfectly with the fresh cream and cumin, for a smooth and comforting soup. It's a simple and quick recipe to make with the Thermomix®, perfect for a light dinner or a festive starter. Feel free to add a touch of fresh parsley for decoration, it brings an extra note of freshness. A vegetarian, healthy and economical dish that the whole family will enjoy!

Ingredients (9 ingredients)

  • 350 g Raw beetroot(s)
  • 4 c. à soupe White flour
  • 400 ml Semi-skimmed milk
  • 200 ml Water
  • 2 clove Garlic
  • 3 c. à soupe Fresh cream (light)
  • 4 pinch Cumin
  • 4 tiges Flat parsley
  • Pepper

Preparation (8 steps)

Prepare beetroots

Add 350 g peeled raw beetroots, cut into cubes, into the mixing bowl. Add 400 ml semi-skimmed milk and 200 ml water.

Cook beetroots

Thermomix® Setting
15 min/212°F/Speed 1 100

Close the mixing bowl and cook the beetroots for 15 Min./100°C/speed 1.

Puree beetroots

Thermomix® Setting
30 sec/Speed 8-10

After cooking, blend the beetroots for 30 Sec./speed 8-10 until a smooth consistency is reached. If necessary, push down with the spatula.

Prepare flour

In a small container, mix 4 tbsp white flour with a ladleful of the pureed beetroots until there are no more lumps.

Refine soup

Return the flour mixture to the mixing bowl. Add 2 clove(s) garlic and add 4 pinch(es) cumin.

Finish cooking soup

10 min/194°F/Speed 2 90

Close the mixing bowl and cook the soup for 10 Min./90°C/speed 2, stirring regularly with the spatula.

Add fresh cream

Thermomix® Setting
10 sec/Speed 3

Add 3 tbsp fresh cream (light) and stir for 10 Sec./speed 3.

Season and serve

Season with Pepper. Finely chop 4 sprigs flat parsley. Fill the soup into bowls and garnish with the chopped parsley.
