Description

This vegetable velouté is a comforting dish, perfect for autumn evenings. I often prepare it with seasonal vegetables that I find at the market. Zucchini, squash, and green cabbage combine wonderfully with the sweetness of carrots and the aroma of onion. A little rice adds a creamy and smooth texture to the soup. It's a simple and economical recipe, ideal for a light meal or a tasty appetizer. Feel free to add other vegetables according to your desires and adjust the seasoning to your taste. A drizzle of olive oil at the end enhances the flavors. A real delight!

Ingredients (9 ingredients)

  • 1 piece zucchini
  • 0.25 piece squash
  • 0.25 piece green cabbage
  • 2 verres rice
  • 2 pièces carrots
  • 1 piece onion
  • to taste Olive oil
  • to taste Salt or fine salt
  • to taste Pepper

Preparation (4 steps)

Vegetable preparation

Wash and cut the zucchini, squash, green cabbage, carrots and onion into small pieces. Set aside.

Cooking the vegetables

Put all the prepared vegetables, rice, salt and pepper in the Thermomix bowl. Add water to cover the vegetables. Cook for 25 minutes at 100°C, speed 1.

Blending the soup

After cooking, blend the soup for 2 minutes at speed 8, gradually increasing the speed. Add the olive oil during mixing.

Service

Serve the soup hot. You can add a spoonful of crème fraîche or some croutons for a more gourmet touch.
