Description

These mushroom tofu balls are a vegetarian main course served with sweet honey carrots. The balls are high in protein and are refined with nuts and herbs. The preparation takes place partly in the Thermomix® and in the oven. The dish is ideal for a hearty lunch or dinner and offers a healthy alternative to meat dishes. The preparation time is about 75 minutes and is enough for 4 servings.

Ingredients (23 ingredients)

  • 250 g Mushrooms
  • 1 Stück Onion
  • 1 Zehe Garlic
  • 3 EL Olive oil
  • 1 EL Tomato paste
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 0.5 TL Smoked paprika powder
  • 0.5 TL Cumin
  • 0.5 TL Cinnamon
  • 1 Bund Carrots
  • 1 Stück Organic lemon (peel and juice)
  • 2 TL Honey
  • 200 g Tofu (natural)
  • 1 EL Walnuts
  • 1 EL Almonds
  • 3 Stiele Parsley
  • 4 EL Breadcrumbs
  • 1 Stück Egg (Gr. M)
  • 1 EL Pine nuts
  • 2 EL Sesame
  • 4 TL Pesto (jar)
  • Carrot greens for sprinkling

Preparation (10 steps)

Prepare mushrooms, onion and garlic

Thermomix® Setting
5 sec/Speed 5, 3 sec/Speed 7

Clean 250 g mushrooms and put them in the mixing bowl. Chop 5 sec./level 5 and transfer. Peel 1 onion and 1 clove of garlic, put them in the mixing bowl and chop 3 sec./level 7. Push down with the spatula.

Sauté mushroom mixture

3 min/248°F/Speed 1, 7 min/248°F/Speed 1 120

Put 3 tbsp olive oil in the mixing bowl, add the chopped onions and garlic and sauté 3 min./120°C/level 1. Add the chopped mushrooms and sauté for another 7 min./120°C/level 1. Season with salt.

Stir in tomato paste and let cool

Thermomix® Setting
10 sec/Speed 2

Add 1 tbsp tomato paste to the mushroom mixture and stir in 10 sec./level 2. Transfer the mixture to a bowl and let it cool.

Prepare and season carrots

Peel 1 bunch of carrots, quarter them lengthwise and place them on a baking sheet lined with baking paper. Add peel and juice of 1 organic lemon, 2 tsp honey, salt and pepper and mix.

Cook carrots in the oven

Cook the carrots in a preheated oven (electric oven: 200 °C/convection oven: 180 °C) for about 30 minutes.

Prepare tofu, nuts and parsley

3 sec/Speed 5, 3 sec/Speed 5

Crumble 200 g tofu (natural). Put 1 tbsp walnuts and 1 tbsp almonds each in the mixing bowl and chop 3 sec./level 5. Wash 3 sprigs of parsley, shake dry and put in the mixing bowl. Chop 3 sec./level 5.

Prepare meatball mixture

Put the chopped nuts and parsley, the crumbled tofu, the cooled mushroom mixture, 1/2 tsp smoked paprika powder, cumin, cinnamon, 4 tbsp breadcrumbs and 1 egg (Gr. M) each in a bowl and knead well. Season with salt and pepper. Let the mixture rest for about 10 minutes.

Roast nuts and sesame seeds

Roast 1 tbsp pine nuts and 2 tbsp sesame in a pan without fat until they are fragrant and lightly browned. Set aside.

Form meatballs and fry

Form small balls from the mixture. Heat 2 tbsp oil in a pan and fry the balls from each side for about 2 minutes.

Arrange and serve

Take the carrots out of the oven. Arrange the meatballs with the carrots. Drizzle with 4 tsp Pesto (jar) and sprinkle with sesame, nuts and carrot greens. Mashed potatoes taste good with it.
