Description

This vegetable and feta tart is a summer delight that smells like the Mediterranean. I love preparing it for a sunny brunch or a light dinner. The crispy puff pastry contrasts wonderfully with the soft and savory filling. The feta brings a salty and creamy touch, while the fresh vegetables add color and vitamins. A little chopped fresh herbs enhance the taste of the whole. It's a simple dish to make, perfect for using seasonal vegetables. Feel free to vary the vegetables according to your desires and what you have on hand. A real treat!

Ingredients (14 ingredients)

  • 1 piece puff pastry
  • 1 piece shortcrust pastry with olive oil
  • 200 g feta
  • 1 piece zucchini
  • 1 piece pepper in thin strips
  • 150 g liquid cream
  • 1 piece diced tomato (without juice and seeds) or some mini cherry tomatoes cut in 2
  • 1 piece egg
  • 2 clove chopped garlic
  • 1.5 c. à s. parmesan
  • 1 tbsp olive oil
  • 1 bunch Fresh herbs mint, flat parsley, fresh cilantro and marjoram (or oregano) chopped (or at least mint, parsley and oregano)
  • 1 pinch Salt or fine salt
  • 1 pinch Pepper

Preparation (6 steps)

Preparation of the dough

Roll out the puff pastry and place it in a pie dish. Prick the bottom with a fork and set aside in the refrigerator.

Preparation of the vegetables

Cut the zucchini into small dice and the pepper into thin strips. Chop the garlic cloves. Put the olive oil, zucchini, pepper and chopped garlic in the Thermomix bowl. Cook 7 Min./Varoma/Stufe 1 without the measuring cup. Salt very lightly and pepper.

Distribution of vegetables on the dough

Spread the lukewarm vegetables on the pie crust. Add the diced tomatoes and the feta cut into cubes.

Preparation of the mixture

In a bowl, beat the egg, liquid cream and pepper. Pour the mixture over the tart.

Adding herbs and parmesan

Sprinkle the tart with chopped fresh herbs and grated parmesan.

Baking the tart

Preheat the oven to 180°C. Bake the tart for 30 to 40 minutes, until the dough and filling are golden brown.
