Description

Ingredients (9 ingredients)

  • 680 g fresh asparagus, trimmed
  • 2 tbsp fresh lime juice
  • 1 tsp grated lime zest
  • 1 tbsp chopped fresh cilantro
  • 1.5 tsp minced fresh ginger root
  • 0.5 tsp white sugar
  • 6 tbsp vegetable oil
  • salt
  • ground black pepper

Preparation (5 steps)

Prepare the Steamer

Pour about 1 inch of water into the Thermomix bowl. Place the asparagus in the Varoma dish.

Steam the Asparagus

Place the Varoma dish with the asparagus on top of the Thermomix. Steam for 4 to 5 minutes at Varoma temperature on speed 1.

Prepare the Dressing

Remove the asparagus and arrange on a serving platter. In the Thermomix bowl, add 2 tablespoons of fresh lime juice, 1 teaspoon of grated lime zest, 1 tablespoon of chopped fresh cilantro, 1 1/2 teaspoons of minced fresh ginger root, 1/2 teaspoon of white sugar, salt and ground black pepper to taste. Mix for 10 seconds on speed 3.

Emulsify the Dressing

Speed 3

With the Thermomix running at speed 3, slowly drizzle in 6 tablespoons of vegetable oil through the lid opening until the dressing is emulsified. This should take about 20 seconds.

Dress the Asparagus

Drizzle the dressing over the asparagus on the serving platter. Serve immediately.
