Description

This onion soup is a classic dish that always reminds me of winters at home. The caramelized onion gives it a sweet and deep flavor, which is perfectly balanced with the dry white wine. Ingredients (10 ingredients)

  • 4 piece White onion
  • 250 ml Dry white wine
  • 1 l Water
  • 50 g Butter
  • 15 ml Sunflower oil
  • 10 g Wheat flour
  • 100 g Grated emmental cheese
  • 1 piece Baguette bread
  • to taste Salt
  • to taste Ground black pepper

Preparation (5 steps)

Julienned onions

Thermomix® Setting

Peel and cut the onions into julienne strips. Place the onions in the Thermomix bowl and program 5 seconds/speed 4. Remove and reserve.

Sauté the onion

Add the sunflower oil and butter to the Thermomix bowl. Program 3 minutes/120°C/speed 1. Add the reserved onion, salt and pepper. Program 20 minutes/120°C/speed 1.

Add flour and wine

Thermomix® Setting
30 min/203°F/Speed 1 95

Add the flour to the bowl and program 2 minutes/120°C/speed 1. Incorporate the white wine and water. Program 30 minutes/95°C/speed 1.

Prepare the bread

While the soup is cooking, cut the baguette bread into slices of 3-4 cm thick. Spread the bread slices with butter on both sides. Place the slices on a baking tray and bake at 180°C for 10 minutes on each side, until golden brown.

Gratin the soup

Preheat the oven to 220°C. Pour the soup into oven-safe bowls. Place the toasted bread slices on top of the soup and sprinkle with the grated cheese. Bake for 3-5 minutes, or until the cheese is golden and bubbly. Serve immediately.
