Description

This warm broccoli salad with tomatoes and arugula is a light and healthy dish, ideal as a starter or main course. The salad is quick to prepare and is perfect for a low-calorie diet. The combination of warm broccoli, fresh tomatoes and spicy arugula ensures a special taste experience.

Ingredients (10 ingredients)

  • 200 g Broccoli (fresh or frozen)
  • 100 g Ripe cocktail tomatoes
  • 1 Handvoll Arugula
  • 1 piece Small onion (50 g)
  • 0.5 tsp Natural salt for the cooking water
  • Herb salt
  • Freshly ground pepper
  • 2 tsp Olive oil
  • 2 tbsp Apple vinegar
  • 3 tbsp Apple juice

Preparation (5 steps)

Prepare broccoli

Divide 200 g broccoli into small florets.

Steam broccoli

Thermomix® Setting
10 min/Varoma/Speed 1 Varoma

Place the broccoli florets in a little salted water in the steamer basket and steam in the Thermomix until tender but firm to the bite. Add 500 ml water to the mixing bowl, insert the steamer basket and steam for 10 min./Varoma/speed 1.

Prepare onion and tomatoes

Cut 1 small onion (50 g) into fine rings and halve 100 g cocktail tomatoes.

Prepare dressing

For the dressing, add 2 tsp olive oil, some herb salt, freshly ground pepper, 2 tbsp apple vinegar and 3 tbsp apple juice to the mixing bowl and mix for 10 sec./speed 3.

Make the salad

Mix the still warm broccoli florets with the remaining ingredients (onion rings, halved cocktail tomatoes, 1 handful of arugula) and the dressing to make a salad.
