Description

This chiffon cake is a real dream! Soft as a cloud, it is perfect for breakfast or a tasty snack. The recipe is simple and with the Thermomix® it becomes even easier. I often prepare it for Sunday brunch and it always disappears in a flash! The secret is to whip the egg whites well and gently mix them into the batter so as not to deflate them. The aroma of lemon and orange makes it irresistible. Try it, you won't regret it! You can also decorate it with powdered sugar or fresh seasonal fruit. It is an inexpensive dessert and within everyone's reach.

Ingredients (11 ingredients)

  • Type 00 flour
  • Granulated sugar
  • Seed oil
  • Lemon juice
  • Orange juice
  • Eggs
  • Baking powder for sweets
  • to taste Cream of tartar
  • Orange zest
  • Lemon zest
  • Powdered sugar

Whip the egg whites

Insert the butterfly whisk into the mixing bowl. Add the egg whites and cream of tartar. Whisk for 4 Min./speed 4 without temperature.

Prepare the egg yolk mixture

3 min/Speed 3/keine

Remove the butterfly whisk. Place the egg yolks and sugar in the mixing bowl. Whisk for 3 Min./speed 3 without temperature.

Add the aromas

Thermomix® Setting
20 Sec./Speed 2/keine

Add the grated lemon and orange zest, lemon and orange juice and seed oil. Mix for 20 Sec./speed 2 without temperature.

Incorporate the flour and baking powder

Thermomix® Setting
30 Sec./Speed 3/keine

Add the flour and baking powder. Mix for 30 Sec./speed 3 without temperature.

Combine the whipped egg whites

Transfer the mixture to a large bowl. Gently incorporate the whipped egg whites into the egg yolk mixture in several stages, mixing with a spatula with movements from bottom to top so as not to deflate the dough.

Baking in the oven

Pour the mixture into the ungreased chiffon cake mold. Bake in a preheated static oven at 160°C for about 55 minutes.

Cooling and decoration

Remove the chiffon cake from the oven and immediately turn the mold upside down on its feet. Leave to cool completely, so the cake will take air and detach itself from the walls. When the cake is cold, sprinkle with powdered sugar and serve.
