Description

This Christmas Apple Mole Cake, prepared in the Thermomix®, is a festive cake with apples and gingerbread spice. The main ingredients are eggs, almonds, apples and Christmas spices. The preparation time is 120 minutes for 12 servings. Ideal for winter coffee time or as a dessert for the whole family.

Ingredients (15 ingredients)

  • 6 Stück Eggs
  • 1 Prise Salt
  • 100 g liquid Butter
  • 200 g ground Almonds
  • 175 g Sugar
  • 0.5 TL Gingerbread spice
  • 2 TL Baking powder
  • 5 Stück small, tart Apples
  • 1 EL Lemon juice
  • 500 g Apple juice
  • 150 g Sugar
  • 1 TL Cinnamon
  • 2 Päckchen Vanilla pudding powder
  • 600 g Cream
  • 3 Päckchen Cream stiffener

Preparation (12 steps)

Prepare and cook apples

Wash, quarter and core the apples. Cut into cubes and sprinkle with lemon juice. Put 450 ml apple juice and 150 g sugar in the mixing bowl and bring to the boil for 10 min./100°C/speed 1.

Add apple pieces and thicken

Add apple pieces. Mix vanilla pudding powder with the cinnamon and the remaining apple juice and add to the mixing bowl. Stir in for 2 min./100°C/speed 2.

Let apple mixture cool

Transfer the apple mixture to a bowl and let it cool for about 1 hour.

Preheat oven

Preheat the oven to 180°C top/bottom heat. Line a springform pan (24-26 cm) with baking paper.

Beat egg whites

Separate the eggs. Put egg whites with a pinch of salt in the mixing bowl and whisk until stiff with the butterfly for 3 min./speed 3.5. Transfer and refrigerate.

Beat egg yolks

Thermomix® Setting

Put egg yolks and 175 g sugar in the mixing bowl and beat until frothy for 3 min./speed 4.

Prepare dough

Add liquid butter and stir in for 30 sec./speed 3. Mix almonds, gingerbread spice and baking powder, add and mix for 20 sec./speed 3.

Fold in egg whites

Add egg whites and carefully fold in with the spatula.

Bake dough

Pour the dough into the prepared pan and bake in the preheated oven for approx. 40 minutes (stick test).

Cool and hollow out cake

Remove the cake from the oven, let it cool briefly, then remove it from the pan and let it cool on a wire rack. Hollow out the base with a spoon, leaving the edge. Crumble the scooped-out cake into a bowl.

Whip cream until stiff

Put cream and cream stiffener in the mixing bowl and whisk until stiff with the butterfly for 2 min./speed 3.

Finish cake

Place the cake base on a plate. Cover with the apple mixture. Spread cream on top in a dome shape and sprinkle with cake crumbs, refrigerate for at least 2 hours. Sprinkle with powdered sugar before serving.
