Description

This hearty white bean stew from the Thermomix® is a savory main course with white beans, carrots, kale, and potatoes. This vegetarian and vegan recipe is ideal for the winter months and can be prepared well in advance. In about 70 minutes, the Thermomix® creates portions for people. Perfect for light, affordable family cooking.

Ingredients (17 ingredients)

  • 600 g white beans, dried
  • 2 Stangen Celery
  • 2 Stück large carrots
  • 150 g Kale
  • 3 Stück medium-sized potatoes
  • 3 Zehe(n) Garlic
  • 1 Stück large onion
  • 2 EL Olive oil
  • 1 TL dried thyme
  • 1 Lorbeerblatt bay leaf
  • 0.25 TL fennel seeds or powder
  • 425 g chopped tomatoes from a jar
  • 900 ml Vegetable broth
  • Salt
  • Pepper
  • 1 Saft juice of one lemon
  • chili flakes (optional)

Preparation (5 steps)

Chop onion and garlic

Place onion in the mixing bowl and chop for 3 sec./speed 5. Add garlic and chop for 3 sec./speed 7.

Sauté the vegetables

Add olive oil, celery, carrots, thyme, bay leaf and fennel seeds to the mixing bowl and sauté for 7 min./120°C/speed 1.

Add potatoes, tomatoes and broth

Add potatoes, chopped tomatoes and vegetable broth to the mixing bowl and cook for 40 min./100°C/speed 1. If using pre-cooked beans, reduce the cooking time to 25-30 minutes.

Add kale to the mixing bowl and cook for 10 min./100°C/reverse speed 1.

Season with salt, pepper and lemon juice. Remove bay leaf and garnish with chili flakes if desired. Mix for 10 sec./speed 3.
