Description

This whole grain rice with vegetables and dried fruits is a delicious and nutritious side dish, perfect to accompany any main course. I prepare it often because it is very easy to make and everyone at home loves it. Whole grain rice, whether red or common, gives it a rustic touch and a more intense flavor than white rice. The sautéed vegetables, together with the dried apricots, raisins, and sun-dried tomatoes, create a combination of sweet and savory flavors that is simply irresistible. In addition, it is a very healthy and versatile recipe, ideal for vegetarians and for those looking for a nutritious and tasty option. Go ahead and try it, I assure you that you will not regret it!

Ingredients (9 ingredients)

  • 300 g Whole grain rice (red or common)
  • Water with salt
  • 200 ml Vegetable broth
  • 2 piece Carrot
  • 1 piece Italian green pepper
  • 4 piece Mushrooms
  • 4 piece Dried apricots
  • 1 puñadito Raisins
  • 4 piece Sun-dried tomato

Preparation (5 steps)

Cooking the whole grain rice

Thermomix® Setting
30 min/212°F/Speed 4 100

Place 300 g of whole grain rice in the basket. Pour plenty of water with salt into the bowl until it covers the rice. Program 30 Min./100°C/Level 4.

Preparation of the vegetables

While the rice is cooking, cut 2 carrots, 1 Italian green pepper, 4 mushrooms, 4 dried apricots, and 4 sun-dried tomatoes into small, homogeneous pieces. Set aside.

Sautéing the vegetables

Thermomix® Setting

Once the rice is cooked, remove the basket and set the rice aside. Empty the bowl. Add a little oil to the bowl, the carrots, the pepper, and the mushrooms. Program 8 Min./Varoma/Level 1.

Incorporation of dried fruits and broth

Thermomix® Setting
5 min/212°F/Linkslauf Speed 1 100 Reverse

Add 200 ml of vegetable broth, the chopped dried apricots, the sun-dried tomatoes, a handful of raisins, and the cooked rice to the bowl. Program 5 Min./100°C/Reverse rotation Level 1. Stir with the spatula to integrate all the ingredients.

Serve the whole grain rice with vegetables and dried fruits immediately.
