Description

This wild boar roast with Brussels sprouts and potatoes, prepared in the Thermomix®, is a hearty main course with wild boar loin, allspice, juniper berries, peppercorns and bay leaf. The recipe is particularly suitable for festive occasions and the winter season. The preparation time is a total of 745 minutes, of which 60 minutes are active working time, and yields 6 servings. Ideal for a hearty family meal or special occasions.

Ingredients (18 ingredients)

  • 5 Stück Allspice berries
  • 4 Stück Juniper berries
  • 5 Stück Peppercorns
  • 1 Stück Large bay leaf
  • 3 Stück Cloves
  • 1 EL Thyme
  • 100 ml Oil
  • 1.5 kg Wild boar loin (ready to cook)
  • 4 Stück Shallots
  • 1 Zehe Garlic
  • 2 EL Clarified butter
  • 500 ml Game stock
  • 100 ml Orange juice
  • 800 g Potatoes
  • 500 g Brussels sprouts
  • 1 EL Redcurrant jelly or cranberries
  • Salt
  • Pepper

Preparation (12 steps)

Prepare spice mixture

Thermomix® Setting
15 sec/Speed 10

Put 5 allspice berries, 4 juniper berries, 5 peppercorns, 1 large bay leaf, 3 cloves and 1 tbsp thyme into the mixing bowl and chop for 15 sec/speed 10.

Make spiced oil

Thermomix® Setting
10 sec/Speed 3

Add 100 ml oil to the spices in the mixing bowl and mix for 10 sec/speed 3. Then transfer the spice mixture to a bowl.

Marinate wild boar loin

Thoroughly rub the 1.5 kg wild boar loin with the spiced oil and marinate, covered, in the refrigerator overnight. This step is done outside of the Thermomix.

Prepare shallots and garlic

Peel and quarter 4 shallots and put them in the mixing bowl. Chop for 3 sec/speed 5. Peel 1 clove of garlic and add. Chop for 3 sec/speed 7.

Sauté shallots and garlic

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tbsp clarified butter to the shallots and garlic in the mixing bowl and sauté for 3 min/120°C/speed 1.

Add game stock and orange juice

Add 500 ml game stock and 100 ml orange juice to the shallots and garlic in the mixing bowl. Transfer the mixture to a roasting pan.

Sear and braise wild boar

Heat the clarified butter in a large roasting pan and sear the wild boar loin vigorously on all sides. Place the wild boar loin in the roasting pan with the stock and simmer, covered, in a preheated oven at 180 °C top and bottom heat for about 2 hours. This step is done outside of the Thermomix.

Prepare potatoes

25 min/Varoma/Speed 1 Varoma

Peel 800 g potatoes, cut into pieces and place in the simmering basket. Put 1 litre of water into the mixing bowl, insert the simmering basket and cook for 25 min/Varoma/speed 1.

Prepare Brussels sprouts

15 min/Varoma/Speed 1 Varoma

Clean 500 g Brussels sprouts, wash and cut the stem crosswise. Place in the Varoma container. After the potatoes have finished cooking, place the Varoma on top and cook for a further 15 min/Varoma/speed 1.

Prepare sauce

Thermomix® Setting
5 min/212°F/Speed 2 100

Remove the wild boar loin from the roasting pan and keep warm. Pass the roasting juices through a sieve and return to the mixing bowl. Simmer for 5 min/100°C/speed 2.

Refine sauce

Thermomix® Setting
10 sec/Speed 3

Add 1 tbsp redcurrant jelly or cranberries to the mixing bowl and stir for 10 sec/speed 3. Season with salt and pepper.

Arrange

Cut the wild boar loin into slices with a sharp knife and serve with the sauce. Potatoes and Brussels sprouts go well with this. This step is done outside of the Thermomix.
