  • 60 g Wild Garlic
  • 2 Stück Onions
  • 300 g Risotto Rice
  • 2 EL Olive Oil
  • 100 ml White Wine or Apple Juice
  • 1 Liter Vegetable Broth
  • 3 EL Grated Parmesan Cheese
  • 40 g Butter
  • Salt and Pepper

Preparation (7 steps)

Chop wild garlic

Place 60 g wild garlic in the mixing bowl and chop for 5 sec/speed 5. Transfer and set aside.

Chop onions

Place 2 onions in the mixing bowl and chop for 3 sec/speed 5.

Sauté onions

Add 2 tbsp olive oil to the onions and sauté for 3 min/120°C/speed 1.

Sauté rice

2 min/248°F/Speed 1 248°F

Add 300 g risotto rice and sauté for 2 min/120°C/speed 1.

Deglaze with white wine

Thermomix® Setting
1 min/212°F/Speed 1 212°F

Add 100 ml white wine or apple juice and simmer for 1 min/100°C/speed 1.

Cook risotto

Thermomix® Setting
20 min/212°F/Gentle stir speed 212°F Reverse

Add enough of 1 liter of warm vegetable broth to cover the rice. Cook for 20 min/100°C/Reverse/Soft stirring level. Gradually add more broth as needed until it is used up and the rice is creamy. Stir occasionally with the spatula.

Season

Stir in 3 tbsp grated Parmesan, 40 g butter, and the chopped wild garlic. Season with salt and pepper.
