Description

These shortcrust pastry cookies with jam are a classic during the Christmas season and simply taste delicious! I make them every year and they are always a hit. The dough is quick to prepare and rolls out well. The filling with fruity jam makes them particularly juicy. Perfect for Advent coffee or as a small gift from the kitchen. If you like, you can also refine the dough with a little lemon or orange zest. Preparation in the Thermomix® is child's play and saves time. An absolute must for everyone who likes to bake!

Ingredients (8 ingredients)

  • 200 g Butter (cold)
  • 300 g Wheat flour
  • 125 g Powdered sugar
  • 1 Pck. Bourbon vanilla sugar
  • 1 piece Egg yolk
  • 1 Msp. Lemon zest
  • 1 Prise(n) Salt
  • 200 g Flour for the work surface

Preparation (6 steps)

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Put 200 g cold butter in cubes, 300 g wheat flour, 125 g powdered sugar, 1 packet of bourbon vanilla sugar, 1 egg yolk, 1 pinch of lemon zest and 1 pinch of salt into the mixing bowl and process into a dough for 2 min./kneading stage.

Chill dough

Remove the dough from the mixing bowl, wrap airtight and place in the refrigerator for 1 hour.

Preheat oven

Preheat the oven to 180 °C top and bottom heat. Line a baking sheet with baking paper.

Cut out cookies

Roll out the dough on a work surface floured with 200 g flour to a thickness of approx. 3 mm and cut out 60 shapes with Linzer cookie cutters. Cut out half of the shapes in the middle with the small cookie cutter. Place the cookies on the baking sheet lined with baking paper.

Bake cookies

Bake the cookies in the preheated oven for approx. 10 minutes.

Decorate cookies

Let the cookies cool and then spread the cookies without a hole with jam and place the cookies with a hole on top. Finally, garnish with some sifted powdered sugar.
